Raw Vegan Chocolate Cherry Pecan Pie | Healthy No-Bake Holiday Dessert | Thanksgiving Recipe 🥧🍫🍒✨



This sweet, gooey, chocolatey confection is my favorite dessert recipe yet! It’s low-fat, completely raw and vegan and won’t break the bank on your health goals this holiday season. It’s so good even your non-vegan friends and family will looove this amazing dessert.

18% fat by calories

You will need:
Vitamix or other high speed blender
Round cake pan with removable bottom
60 pitted Medjool dates (about 2 large packages)
3/4 cup of dried mulberries
1 1/2 cups of pecan halves
3/4 cup of mission figs
4 cups of frozen dark sweet cherries
4 tbsp of raw carob powder
1 cup of coconut water
1/4 tsp of cinnamon

FIG CRUST:
15 pitted Medjool dates
3/4 cup mission figs
3/4 cup dried mulberries
3/4 cup pecans

CHOCOLATE CHERRY FILLING:
(My pan fit 2 of this portion)
20 pitted dates
1 1/2 cups thawed dark sweet cherries
2 tbsp raw carob powder

CARAMEL SAUCE:
5 pitted dates
1 cup coconut water
1/4 tsp cinnamon

+ 1 cup thawed dark sweet cherries to mix with caramel sauce
+ 3/4 cup pecans to top pie

Defrost 4 cups of sweet dark cherries for about 2 hours at room temperature.

In a high speed blender, blend the ingredients for the crust until it is a cookie-dough consistency.

(Optional) Line the bottom of your cake pan with parchment paper or plastic wrap. Mine worked fine without this step.

Spread the crust onto the bottom of your pie mold.

Blend the ingredients for the filling and pour into your pie mold. I made 2 batches to fill my mold.

Top with pecans (about 3/4 cup) and put the pie in the freezer for 24 hours.

Blend the ingredients for the caramel sauce and stir in your leftover thawed cherries. Store this topping in the fridge.

Let the pie thaw for 15-30 minutes at room temperature before serving. Make sure to cut through the crust when slicing your pie. Enjoy! 🥧

popular thing forpeople to have but in my opinion it’snot that good and if you’ve ever triedbiting into a raw pumpkin it’s it’s notvery enjoyable so today we’re going tobe making something just as good just asclassic but super creative superdeliciouschocolate cherry pecan pie I personallylove pecan pie and this is a great twiston it if you want to feel great thisholiday season bring this pie to dinnerand you will amaze your family andfriends raw desserts are so good sowe’re gonna start off with making ourpie crust a little similar to my applepie jars recipe but we are going to usesome mission figs and this one to getthat dark rich color look at that lookat when they when they turn white withsugar that means they’re good to eat sowe’re gonna start with 3/4 of a cup ofall berries and try not to mulberriesand we want to get lots of pecan flavorin this pecan pie so we’re going to usea pecan crust 3/4 of a cup of pecansthese are my favorite night becomes andwe’re also going to use 3/4 of a cup ofmission figs make sure you take thestems off the top because those are hardand you go what that texture in yourdessert that looks good three bars inthe top of things well it would help ifyou plugged in the blender maybe itwould work better so I knew I wasmissing something we’re also going toadd 15 dates to this so it’s actually 12 3 13 14 15okay now this is going to be superextremely sweet and that is exactly whatwe want for desserts and you can snackon your defrosting cherries while youwait for your blender to cool off so youwant to be defrosting your cherries inthis time so that they’re nice and gooeyor your filling and they’re not fruitsand you don’t want to make a smoothiepie that’s not what we’re trying to makewe’re trying to make a cherry pie so Iused about the whole four pound bag offrozen dark sweet cherries on the edgesto frost them in a bowl so the internshave been defrosting for about two hoursthat should be good let’s get this crustin the pan Wow it’s like a it’s likecookie dough I mean if you really wantedto you could just make this this is thedesert and make these into little barslittle big bars Oh like Fig Newtonscomment if you want me to make a biggerone recipe don’t worry about gettingevery single last bit out of therebecause we’re going to make a big messin the blender next anyway people liketo use spatulas for this but I make thebest tool for anything is your hand andlook at all those lovely fingerprintsthat I’m making oh there’s a date inhere deck the halls with boughs ofBiggie’s ha ha is this what biggiepudding is I’ve never had that but Imean is that what this and your guestswon’t see the fingerprints but yourhands are clean so it doesn’t matter sonow that we have that set up we aregoing to make the chocolate cherrybeauty and let’s not forget the datesthis time but what is quick let’s putthe cherries in perks so it doesn’t getclogged so that’s a company half ofcherries and one two sixteen seventeeneighteen nineteen twenty let’s do 20dates and we’re gonna add 2 tablespoonsof carob powder to make it chocolatetastes like a candy bar it could be itcould be a little smoother[Music]haven’t you been watching was not nearly enoughso kick and then we’ll add that secondlayer of chilicheck out this filling I’ll make alittle swirl in it that’s what everyoneelse does right and so for the ship andnow we’re going to line the top withpecans to make it a beautiful pecan piewell as soon as I get the freaking shotset up and look at this amazinglybeautiful pielike imagine bringing this to holidaydinner people go crazy and it tasteseven better than it looks because itdoesn’t have any bitter ingredients likeflour or butter just sweet stuff fruitand little spices and a little bit ofnutsI’m gonna put it in the freezer for acouple hours and then slice a piece foryou guys all right so it’s the next dayas we put the pecan pie in the freezerso that it solidifies and we can get outthe pie shaped pie hopefully
