Keto Pumpkin Pie! (S-3 E-93)



Keto Pumpkin Pie!
A must make during pumpkin season!
Instructions:
2 ea Pumpkins sweet small for baking
16 oz Pumpkin after baking, peeled and mashed(freeze whats left)
3/4 cup Golden Monk Fruit Sugar
1tsp Cinnamon ground
1/2 tsp Salt
1/2 tsp Ginger ground
1/2 tsp Nutmeg ground
1/4 tsp Orange zest
1/4 tsp Mace ground
1/4 tsp Pumpkin Spice ground
1/4 tsp Allspice ground
1 tsp Vanilla extract
2 ea Eggs large
12 oz Half and Half Milk
PIE SHELL:
1 cup Almond Flour
½ stick Butter, melted
1/3 cup Golden Monk Fruit Sugar
Instructions:
Cut pumpkins in half and remove all the seeds and and scrape clean. Place on a sheet pan covered with foil cut side down. In a pre-heated 350f oven bake 35-40 minutes or until you can insert a knife in to the meat and it comes out clean. Mix the sugar and all the spices in a small bowl. In a large bowl add pumpkin and eggs and mix with a hand mixer until the eggs and pumpkin are well mixed. Add sugar and spice mixture then
slowly add milk while mixing. Mix until all is well blended. Pour into your pie shell.
Bake at 425f for 15 minutes then reduce temperature to 350 f and bake for 1hour or until a knife inserted near the center comes out clean.
Pie Shell Instructions: Makes 2 shells
Mix well and from thinly around pans. Bake in a preheated 350 F oven for 8 minutes.

little Bowl to put the theinsides in and a sheet pan to put thepumpkins on right now go ahead and setyour oven to 350 so it’ll be ready whenwe’re ready with the pumpkins so let’scome on down here and let out abeautiful little pumpkins you’re gonnaneed this sharp knife we’re gonna justgo ahead and take this off dependingyour little Bowl and we’re going to getour cut down this wayand that’s why I said you need a sharpknife then you have the insides sobasically we’re going to take thestringy part out and the seeds byscraping it with a spoon and the restorwant to bake to get our pumpkins we’regoing to go ahead and cut the we’ll goahead and do this one so you’ll knowwhat’s going on so I’m going to take alittle cut right through here with thisyep loosen this up a little bityou get that email now you can savethese little seeds and toast them offhave toasted pumpkin seeds they’redeliciousI’m debating whether to do that or notbut anyway then we still have theselittle stringy parts in here we want tokeep that out pretty clean pumpkinthat’s what you want right there I havemy sheet pan sprayed and I’m just gonnagive this a little spritz and you justwant to place them face down or skinside up so we’re going to go ahead andfinish these other two the the otherthree parts and we’re gonna get them inthere yeah I have them all done got myoven preheated it’s 350 we’re gonna bakethese for 30 to 35 the pumpkins outcooling if you’re on keto and you wantto make this crust this is fine ifyou’re not on keto you can just go aheadand buy you some pie shells we’re justgoing to make a crumble crust with somealmond flour I’ve gotten up this is athird of a cup scooper so I’m gonna put2/3 in here and this probably makes twolittle popping round fruit sugar in hereI’ll just do 1/3 a cupgo ahead and mix this up real good youdon’t want it real sweet but just sweetenough I melted some butter pour some inthere no rhyme or reason recipe on thisyou can get you can get a good recipeoff this off the up any YouTube channelI’m just pulling it together the sievemine’s a little little dry I mean excusemea little moist we have a little moreflour so this is about a cup of flourand about a half a stick of butter 1/3cup surejust brush it around put some of this inherewhatyouand that’s basically it these arethey’ve got a mile bank they say the wayI like to do them I just like to I get justgonna mix this up with the sugar rotssmells goodokay all right we’re going to go aheadand move over to mixing the eggs and thepumpkin that I weight off I have onepound of pumpkin it’s got my handblender and I have two large eggs andwe’re gonna go ahead and get this allsmooth in and corporated real well pointI’m going to add one teaspoon of vanillaextract which I have butter vanillaemotion but you can use just regularvanilla extract it smells delicious[Music]good me I’m go ahead and buy all my dryingredients my sugar and my spices willcleaned it together last but not least Ihave half and half milk I got 12 ouncesif you’re not on keto you go ahead anduse 12 ounces of evaporated milk thathas too much lactose sugar in it forketo so I’m using half-and-halfit’s more slowly add your meal there’s alittle bit of the strings got hung onthere that ain’t and clean off good butthat’s good got them out of there okayI’m gonna bring our posh Hills like toladle this in here I don’t make too muchof a messI have my oven preheating on 425 sorryabout thatlet’s go this way I have my ovenpreheating on 425all right we’ll put it in the oven at425 for 15 minutes and then I’m going toreduce the heat to 350 and then I’mgonna bake it for 50 minutes and we’llcome back when they’re done[Music]we’ll do a taste test amount pie cheapthough friendly still got my crust onthe bottom wow that is
