How to Cook Raw Pumpkin and Make Dairy-Free Pumpkin Pie and Pumpkin Spice Latte!

I love pumpkin everything and wanted to share some dairy-free pumpkin recipes with you because, well, I can’t eat dairy, but I still want some pie! Cooking raw pumpkin (2:27):
-Preheat oven to 350 degrees and line a baking sheet with foil
-Cut pumpkin in half by starting near the stem and cutting down and around the base of the pumpkin
-Pull pumpkin apart (this will result in the stem breaking off) and use a large spoon to scrape internal “guts” out and throw those away (keep seeds if you wish to)
-Oil both inside and out side of pumpkin with olive oil and sprinkle a pinch of salt into the inside of each
-Place skin-up on a lined baking sheet and poke holes with fork
-Cook for 30-40min or until soft when poked with a fork
