Gluten Free, Vegan Dough makes Pie Crust, Cinnamon Rolls, & Crackers



GFV Pie crust/Cinnamon Roll/Crackers/Communion wafer
Flour Blend
1/2 c Rice flour
1/2 c tapioca flour
1/2 c arrowroot flour
1/4 c coconut flour
1/4 c oat flour
1/4 c millet flour
2 tbs psyllium seed husk
2 tsp baking powder
pinch of salt
2 heaping tsp of sugar
2 tbs vegan butter plus more for layering dough
Egg substitute
2 tbs each of psyllium seed husk, flaxseed & chia seed ground into a powder.
Use 3 tsp of this mixture soaked in aquafaba or water or coconut milk (10 min) for the egg substitute.
3/4 c oat milk (make it yourself by blending oats and straining off the liquid). It thickens up anything. Add it one tbs at a time till the dough comes together. If you can’t use oat milk, use aquafaba instead.
Instructions
Mix all ingredients together till you get a dough. Refrigerate for atleast 2 hours. Use rice or tapioca or arrowroot flour to roll out the dough. Roll out dough to about 1/2 inch and spread butter on it. Fold up dough and roll it out again. layer with butter and fold up. Cool for 2 hours. Repeat layering 3 more times.
Proceed to make Pie crust, Crackers, or Cinnamon rolls. Bake Pie crust for 10 min before filling. Then bake pie depending on your oven or the type of pie. i baked my apple pie at 375 F till top was golden brown. So you have to watch it. Also my oven works with a cylinder of gas so it is not as powerful as one connected to a gas main.
Bake cinnamon rolls for about 15 minutes. Dough will be soft still. Don’t let it dry out in the oven.
Bake crackers four about 10 minutes. You rolled out the dough thin so it won’t take much time to bake.
