Cook with Me Chicken Pot Pie / Instant Pot Against Disabled Woman: Round 1.

Hey guys, welcome back to my channel. I trust you all had a wonderful Holiday Season and that 2020 is getting off on the right foot or wheel as the case may be. Today, I am making Chicken Pot Pie in my Instant Pot! Is it as easy as they claim? Click on the video to find out!

Chicken Pot Pie
As soon as you get that pesky piecrust out of the way, preparing a chicken pot pie can be pretty simple. For my recipe, I solve that pesky piecrust problem by replacing it with biscuits, which I bake as a filling in the oven; preparing the biscuits as directed on the package.
Ingredients
2 tablespoons vegetable oil
1 tablespoon butter
1 ½ pounds boneless, skinless chicken breasts, chopped
1 small yellow onion, diced
2 cups chicken stock
2 medium Russet potatoes, chopped
1 bay leaf
¾ teaspoon dried thyme
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon poultry seasoning
¼ teaspoon garlic powder
2 cups frozen mixed vegetables
½ cup half-and-half/milk
3 tablespoons cornstarch
¼ cup grated Parmesan cheese
4-8 cooked biscuits
Directions
MEAT/STEW/HIGH-PRESSURE/TWO MINUTES/NATURAL RELEASE/5 MINUTES
1. Preheat the instant pot on SAUTÉ. Add vegetable oil and butter and heat until sizzling.
2. Add the chopped chicken breasts to the insert and sauté for 4 minutes, until it begins to lightly brown. Fold in diced onion and sauté for an additional 2 minutes.
3. Pour in chicken stock and glaze the insert before stirring and potatoes, bay leaf, thyme, salt, pepper, poultry seasoning, and garlic powder.
4. Secure lid and seal pressure release vent.
5. Set Instant Pot to MEAT/STEW on HIGH pressure for 2 minutes.
6. Once cook time has elapsed, wrecked the pressure release through NATURAL release for 5 minutes before quick releasing any remaining pressure.
7. Set Instant Pot on SAUTÉ and stir in frozen mixed vegetables. Bring up to a summer.
8. Whisk together milk and cornstarch before stirring and to the cooking liquid. Let summer, stirring constantly, 1 minute.
9. Turn off cooker and stir in Parmesan cheese before serving bowls topped with 1-2 cooked biscuits each.
