Ingredients
FILLING
1 1/2 pounds lean ground chuck
1 tablespoon tomato paste
3 tablespoons butter
1 1/2 cups chopped onion
1 1/2 cups chopped carrots
3 tablespoons all-purpose flour
2 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon chopped fresh thyme leaves
2 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
1 1/2 cups fresh or frozen English peas

CRUST
2 sweet potatoes (about 1 1/2 lb.), peeled and very thinly sliced
2 Yukon gold potatoes (about 1 1/2 lb.), peeled and very thinly sliced
2 tablespoons butter, melted

Step 1
Prepare Filling: Cook ground chuck in hot oil in a large skillet over medium-high heat, stirring occasionally, 8 minutes or until crumbled and no longer pink. Add tomato paste, and cook, stirring occasionally, 4 to 5 minutes. Remove mixture from skillet, and drain. Wipe skillet clean.

Step 2
Melt butter in skillet over medium-high heat. Add onion and carrots, and sauté 4 to 5 minutes or until slightly browned and tender. Stir in flour, and cook, stirring constantly, 1 minute. Stir in broth, and bring to a boil, stirring constantly. Reduce heat to medium; stir in Worcestershire sauce and next 4 ingredients. Simmer 10 minutes or until thickened. Stir in peas and beef mixture. Remove from heat.

Step 3
Prepare Crust: Preheat oven to 375°. Microwave sweet potatoes and 1/4 cup water in a microwave-safe bowl covered with plastic wrap at HIGH 5 minutes. Repeat procedure with Yukon gold potatoes.

Step 4
Arrange about two-thirds of potato slices, edges slightly overlapping, in a lightly greased (with cooking spray) 9-inch deep-dish pie plate, covering bottom and sides. Spoon in filling. Arrange remaining potato slices, edges slightly overlapping, over filling. Brush potatoes with melted butter.

Step 5
Bake at 375° for 40 to 45 minutes or until potatoes are tender. Increase oven temperature to broil, and broil 2 to 3 minutes or until golden brown and crispy. Let stand 10 minutes before serving.

I’mpretty sure they’ll be a little over 50by tomorrow August and they’re talkingto mainly if you hear that it’s comingthrough the monitor so for today like Isaid I decided not to do a dessert I diddesserts like all the first three fallfood Friday’s I did desserts today isnot a dessert today is an autumn take onan old classic this is like the fallversion of shepherd’s pie so here we gowe’re fixing to get right into makingthis recipe it’s a really folly dayagain today folly polish feels like fallit’s kind of coolcloudy and rainy and leaves are fallingeverywhere it’s beautiful and thetelephone is ringing alright so here wego first up we’re gonna put in ourground beef Chuck I’m making a littlebit more than the recipe called for herewe go we’re just gonna let this cookuntil it’s done then we’ll start addingin all the other stuff while the groundbeefs cooking we’re going to go aheadand chop up our onion and carrots[Music][Music]all right the meat is pretty much donewe’re gonna add in about a tablespoonand a half tomato paste like I said theoriginal recipe will be down below sinceI’m making this a little bit more I’mhaving to add a little extra alright sonow we’re gonna transfer this meat outof here I’ve got a big bowl back hereand you’re moving it to this big bowlall right so I got the meat out got itdrained now in the same pan we’re gonnaput three tablespoons of butterall right the butter is almost melted sowe’re gonna go ahead and put in ouronions and carrots now now it’s gonnastart smelling good in here with theseonions going in you’ve been my foamspatula it’s a must it’s a fall foodFriday we must use the fall spatulasomewhere I also had to put on my aproncuz I got this shirt from Walmart todayand it’s only $4 in something but stillI didn’t want my briefs nothing gettingon it so I also have my put on all rightso now I’m gonna turn this up just alittle over medium and we’re gonna cookthese onions and carrots for about fiveminutes let them simmer for about fiveminutes while the carrots and onions arecooking I’m gonna go ahead and startgetting my potatoes ready so what we’regonna do with the potatoes is in thislittle bowl I have about 1/4 of a cup ofwater we’re gonna put the sweet potatoin this bowl cover it with plastic wrapand stick it in the microwave for justabout 3 to 5 minutes we just want to getit soft enough so I can cut it reallyeasily because we’re gonna slice theseup into circles to go on top of ourshepherd’s pie we’re doing two sweetpotatoes and then the recipe called forI think Yukon Gold potatoes or somethingbut we’re gonna use russet once becausethat’s what I have it’s starting tosmell good now Thank You onionsokay so the carrots and onions have beencooking now for about five minutes we’regonna go ahead and put in a threetablespoons of flour all-purpose flourall right we’re gonna get this nice andmixed up for just about a minute letthis cook with the flour all right nowwe’re gonna add in two cups of beefbroth and we’re gonna let this come to abowl if y’all hear anything in thebackground like maybe a little bit ofChristmas music that’s my baby monitorover there manlings asleep and I havejust a little bit of Christmas musicplaying in the background for him so hemight not hear me talking as much if hehears me talking he’ll wake up he sleepsreally good through lots of noise trustme it’s rarely ever quiet in this housebut when he hears momma talkingsometimes it wakes him up and then hewants me to come get him so I have alittle bit of Christmas music playingdown low in there with him while he’ssleeping okay it’s starting to come to abowl all right now we’re gonna add in ateaspoon of thyme we still have theselittle thyme leaves here for more ty tosit the other day so I’m just gonna putin just a few of those now we need somesalt and peppery’all have all exact you knowmeasurements down below for y’all y’allknow me I just be eyeballing stuff okaynow we’re gonna add in this bag offrozen sweet peas this is a 10 ounce baghere and like I said y’all this is notexactly the recipe but I will link theoriginal recipe down below for y’all andhave it typed out it’s just a little bitdifferent I left out a few things maybechanged a few things that’s what makesit your ownjust get inspiration from things andthen make it the way you want to begin Ithink I’m gonna add just a little bitmore of the beef broth because like Isaid I did do a little moreof the ground beef and also I’m gonnaput just a little more beef brothalright now we’re gonna put our meatmixture back in here and then we’re justgonna let this simmer while I cut up thepotatoes and get them all ready sorryabout the microwave in the backgroundbut I’ve got my other potatoes going sothis should be really easy to slice yessee it’s very easy to slice now[Music]all right yo here we go we are ready toput everything in the pan now look athow pretty this is I got it from Walmartit is so pretty and the color down hereis like this teal color they also had areally pretty orange one that hadpumpkins and all inside but they onlyhad one of this color left at ourWalmart so I got this one it’s got likethe leaves and acorns and stuff in it itis so pretty and it was only ten dollarsso the first thing we’re gonna do isspray our little pan here casserole dishand thing now we’re gonna dump in ourmeat mixture we’re rocking around theChristmas tree I don’t know if y’all canhear that music or not just gonna spreadit out here I will tell you all this soabout these dishes if you decide to getyou one at your Walmart pick it up andsit it down flat on like a shelf orsomething and make sure that it’s levelbecause this one is a little wobbly it’snot like completely flat which I’m notworried about it it’s not a big dealit’s it’s just a little bit but you knowjust check yours if you see amateurwal-mart and decide to get one make sureit’s you know flat on the bottom and notwobbly so now we’re gonna start with ourpotatoes and we’re gonna lay them justlike that kind of like fanning them outI might have to do two anyway so we’rejust gonna lay them like that all theway across the pan here[Music]we have some melted butter here we’regoing to brush this all over the tops ofthe potatoes now I’m gonna put just alittle bit of salt and pepper on the topall right and we’re gonna bake this badboy at 370 degrees for about 40 to 45minutes okay and I did not do a greatjob of cleaning as I went today so whileit’s in the oven and mainly it’s stillsleeping I’m gonna go ahead and getthese dishes washed up clean up thiskitchen it’s kind of scary getting apreacher man[Music]you[Music]see see and preach remain around herelistening to the rain huh are y’allexcited about this new shepherd’s pie[Music]with the one apples over Milo’scirrhosis motor Milo’s in attack modeJonah it’s not apples on top of therebuddyit’s sweet potatoes and regular potatoesand did you take it with apples thatwould be straightall right yo it’s done fallversion you know I’ll be honest with youyeah I don’t believe in lies go aheadI’m not what you thinkmm-hmm it needs a little bit more saltbut he’s really good a little more saltyeah see them it called for more saltthan I put it but I was like I thinkthat’s a lot of salt so I didn’t putthat much salt but I guess it did need alittle more saltI mean you know it’s super good yeahwould you want
