Butterscotch Banana Cream Pie

Recipe from allrecipes.com called Grandma’s Butterscotch Pie but I added bananas.

1 cup brown sugar (or 3/4 to make it less sweet)
4 Tbsp corn starch
1/2 tsp salt
2 cups milk
2 beaten egg yolks
1 Tbsp unsalted butter
1 tsp vanilla
2 sliced bananas
baked pie shell

Mix first 3 ingredients in sauce pan. Add milk. Stir and cook over low heat until thick stirring constantly. Add 2 beaten egg yolks (heat the yolks up with a few tablespoons of pudding). Add butter and vanilla. Cook for 5 minutes more on low heat. Pour into baked pie shell over sliced bananas. Bake 5 minutes in 400° oven until it browns a little on top. (That step isn’t necessary unless you want a thicker pudding). Let cool and cover with whipped cream. Cover and store in refrigerator.
