Ingrediënten/Ingredients
400 g tarwebloem/flour
200 g witte basterdsuiker/white sugar
1 mespunt zout/pinch of salt
250 g ongezouten roomboter (koud)/ cold unsalted butter
2 el kraanwater (koud)/ teaspoons of cold water
200 g amandelspijs / almond paste
1 citroen (schoongeboend) / lemon (peel only)
2 middelgrote eieren / middle size eggs
12 garneeramandelen / almonds for garnishing

Sift the flour over a bowl and mix in the caster sugar and the salt. Cut the butter into cubes and add with the cold water. Knead quickly into a ball. Pack in cling film and let it rest for 1 hour in a cool place outside the refrigerator.

Preheat the oven to 200 ° C. Put the almond paste in a bowl. Grate the yellow zest of the lemon above it. Mix in half the eggs. Knead to an even mass and spin 12 balls.

Dust the work surface with some flour. Use the rolling pin to roll out half of the dough into a 2 mm thick piece. Cut out 12 circles with the cut-out mold and place it on a baking tray lined with baking paper. Place a ball of almond paste on each round and press a little flat.
Beat the rest of the egg in a small bowl. Brush the edges of the dough grounds around the food.

Also roll the other half of the dough into a 2 mm thick piece and cut out 12 more rounds. Place the circles on the dough pieces with food and press the edges. Brush the top of the cakes with the egg and place an almond on each cake. Bake the cookies in the middle of the oven for about 15 minutes until golden brown and done.

Storage Tip:
You can make the filled cookies 2 days in advance. Covered, they can be kept for around 3 days.

  2. they looked fantastic! you can also add cookie spices for speculaas and put that through the batter. it tastes even better in my opinion. I think it is amazing that you make these typical dutch recipes because the dutch cuisine isn’t really eccentric in my opinion. keep up the great work!!

  4. PS: One other little thing:
    I think that “schoongeboend” (referring to the “citroen” in the recipe underneath the video) means literally something like “cleanly polished”. So I think you are simply advised in this recipe to wash the lemon (especially if it has not been grown organically).
    I’m sure you did that anyway (if necessary) but it seems as if you translated “schoongeboend” to “peel only” whereas in the Dutch version of the recipe it only tells you further down in the instructive paragraph which part of the cleaned lemon is needed…

  6. Those bottom layers looked like at least 5mm. An inch being 25.4mm means 2mm is less than 1/10th inch. 5mm is about 1/5th

  8. Hi Jovie, I like your videos a lot.
    I’m a little confused about the measurements referring to tap water in this video, though.
    2 El it says on the Dutch side, which I think means 2 “Eetlepels”. These are the bigger spoons I think you would for example use when eating a soup.
    But then on the English side (in the description beneath the video) this is transferred to 2 teaspoons, – which in my perception are the smaller spoons you would use when stirring a cup of tea.
    It’s probably not that important and since I’m neither Dutch nor English I might be mistaken… But I thought I’d mention it anyway…
    And: great video, so far, anyway.
    I loved how you reacted to Daan’s indecisive look and hesitant answer that yes, he HAD washed his hands… At some point 😉

  13. F.Y.I. in your next video, there is a difference between “Erwtensoep” and “Snert” :
    Erwtensoep is split pea soup
    and is also made in other countries.
    Snert is also made with split peas BUT when snert cools down, you can turn the pot upside down and the snert will remain in the pot (when made correctly), any normal soup will drop from your pot, only when you heat up your snert again it will become a “liquid” again.

    Looking forward though.

  18. Gevulde koeken are called “Almond Rounds” in Australia. I will follow this recipe nevertheless 😉 Just the short form of Richard sound like Dik in Dutch but that means obese. I better stop this line like William which sounds like bil in Dutch. My contribution of what sounds funny in Dutch 🙂

  20. Hmmm again. still pondering on making that apple . I loved batter when I was I child ,mostly cake batter and we used a flessenlikker to scrape and lick that why it’s called a flessenlikker , not a scraper.

  24. I made pizza dough some time ago and I told my 4 year old son the dough had to rest. Next, my husband came downstairs and wanted to tell me something. But my son was like: Sssssssssht, daddy, the dough is resting!!!

  25. I mostly remember gevulde koeken from high school. Where they were sold in the kantine. Just like the roze koeken (also really Dutch).
    Awesome that you’re already making so much money as a YouTuber that you can buy a new car!
    Remember when cooking snert: it’s only snert if your spoon or ladle can stand straight up in the pan. Even when the snert is warm.
