1. Preheat Oven to 425 degrees.
2.Mix 2 cups Soy Milk and 1 Tbsp Apple Cider Vinegar. Set to the side.
3.In separate bowl combine 2 cups of Spelt Flour and 2 Tablespoon of Baking Powder, 1Tsp of salt. Mix ingredients together.
4. Add 2 Tablespoon of Vanilla extract, 1/3 cup of Maple Syrup and 1/3 cup of Coconut Oil and stir.
5.Slowly add wet ingredients to the dry ingredients while stiring until fully combined.
6. Use a 11×16in sheet pan lined with parchment paper and spray with non stick spray. Pour batter on top.
7.Bake at 425 for 5 mins then remove and spread blueberries and strawberries along the top. Then place back I oven for another 10 to 15 minutes or until it is fully baked.
8. Serve with maple syrup or powder sugar or without either.
