Sweet Potato Pancakes Recipe || Cook With Me || Healthy Recipe || What I Eat

Recipe:

Boil 3 small sweet potatoes. Drain water. Mash and set aside to cool. Add in 2 medium eggs, 1/2 tsp vanilla*, pumpkin pie spice*, 2 TBSP milk of choice (I used coconut), 2 TBSP coconut flour. Whisk together until completely combined. Heat oiled griddle (I used a small amount of coconut oil) on high until hot. Spoon batter onto pan in small rounds as seen in video. Try to spread them evenly for even cooking. Lower heat to medium. Cook on each side 2 1/2 to 3 minutes. Enjoy with raw honey, maple syrup, or whipped cream!!!

I have seen some people make these using only eggs and sweet potatoes. However, that recipe didn’t work for me. So I came up with this one 😊

hi this is Nancy with life’s blessings I
hope you’re doing well today
I just wanted to share my sweet potato
pancakes with you so all I did was
boiled about 3 small sweet potatoes so
that would be equivalent to about one
and a half medium sweet potatoes and
after they were done boiling I just
drained the water off of them completely
so they would cool faster and then I
mashed them while they were still hot
but then after they cooled down I mixed
in just about three tablespoons of
coconut milk and two medium eggs and
about two and a half tablespoons of
coconut flour that coconut flour the
eggs and the milk just kind of binds
them together so that you can actually
make the pancakes out of them and these
pancakes are about 3/4 the size of your
average regular pancake so I added a
little bit spices in mine I added the
pumpkin pie spice which I believe is
just cinnamon ginger nutmeg and allspice
there is no sugar added to this of
course you could drizzle a little honey
over it if you wanted to which is what I
did I have a bit of a sweet tooth so I
did do that if you had some raw organic
honey you could do that but you know if
not then or maybe that’s not permitted
on the diet that you’re following so I
know on the keto diet you could use Cool
Whip I’m not sure if the coconut flour
is actually considered keto or not but I
know a lot of you are using things like
that anyway rather than using the
regular flour it’s a little better for
you so I wanted to show you what the
pancakes actually look like while
they’re cooking oh and I forgot to
mention I did add a little bit
vanilla flavoring in the pancake batter
so this is what they look like as
they’re cooking and of course here’s our
finished pancake product that’s actually
two pancakes on top of each other this
is the batter and that is about all you
need to make one pancake right there
just the amount that’s there in my bowl
in my spoon so you cook them for about
two and a half minutes on each side and
then you flip them over and you know it
you don’t need to flip them before two
and a half minutes because if you do
then you’re going to end up with that
right there I don’t know if you see that
one but um I flipped that one just a
little bit too soon and yeah it kind of
crumbled on the bottom so when I flipped
it it looks like that but this is
actually what it’s supposed to look like
like this one right here so all right
