Paid Content by Delaware Department of Agriculture – Making A Puffy Apple Pancake



It’s apple picking season on Delmarva and we have some beautiful ones in the DelmarvaLife Kitchen. Chief of Community Relations with the Delaware Department of Agriculture‘s Delaware Grown program, Stacey Hofmann shows us how to make a Puffy Apple Pancake.

Puffy Apple Pancake

Ingredients
2 Tbsp butter
2 Tbsp brown sugar
½ tsp ground cinnamon
1 medium apple (Gala, Fuji), cored, peeled, sliced
2 large eggs
½ cup milk
¼ tsp salt

Directions
Preheat oven to 400°F. Melt butter in a 9-inch pie plate.
Remove from oven, brush butter on sides of pie plate. Sprinkle brown sugar and cinnamon on bottom of pie plate. Arrange thinly sliced apples over sugar.
In a bowl, whisk together eggs, milk, and salt. Pour over apples.
Bake for 30-35 minutes or until puffy and deep golden brown.
Remove from oven and immediately loosen edge of pancake. Turn upside down on to plate.

Handling & Storage
Apples should feel firm to the touch and be free of bruises.

Place apples in a plastic bag and refrigerate in the crisper for up to a month.

Do not peel or slice an apple until ready to use or it will begin to brown. Dip slices into lemon juice to slow down the browning process.

AND GUESS WHAT WE’RE TURNING THEM INTO SOMETHING CALLED PUFFY APPLE PANCAKES MADE HER SAY AT THIS CHIEF OF COMMUNITY RELATIONS WITH THE DELAWARE DEPARTMENT OF AGRICULTURE STACY HOFFMAN IS HERE WITH US TO SHOW US HOW IT’S DONE. YES THIS JUST SOUNDS GOOD. YEAH IT REALLY DOES. IT’S A CHANGE OF PANCAKE IT’S NOT YOUR TRADITIONAL BUT IT’S ENOUGH IN ONE PIE PLATE TO FEED FOR AND HAVE SOME HEALTHY FOOD TO GO ALONG WITH YOUR BREAKFAST. SO WITH OUR BROWN SUGAR AND BUTTER THERE’S NO NEED FOR SARAH JUST ENJOY THE APPLE ALSO I SAY WE GET STARTED THE SOONER WE MAKE IT THE SOONER WE EAT SO SO WE HAVE ALREADY IN OUR PAN HEATED UP TWO TABLESPOONS OF BUTTER SO YOU WANT TO BRUSH THAT OK. AND THEN YOU’RE GOING TO MIX JUST BRUSH IT RIGHT ON IT AND GET IT ON THE SIDES OK. AND JIMMY WHILE LISA’S DOING WHAT I CRACK YOUR EGGS YOU NEED TWO EGGS IN THERE AND YOU’RE ABOUT HEY THERE WE GO. THIS IS A NICE SLOW HANDY SILICONE BRUSH HERE. YEP. ALL RIGHT. AND THEN WE’RE GOING TO GET TWO TABLESPOONS OF BROWN SUGAR THAT’S WHAT I’M ASSUMING YOU WANT THE YOLK IN HERE. EVERYTHING GOT GOOD SO THAT’S OK. AND I’M PUTTING THAT IN HERE IN THERE. GOING MIXED UP WITH CEMENT MIXED WITH A CINNAMON THIS IS THE SWEET LITTLE DOUGH THE EGGS GO AHEAD AND BEAT YOUR EGGS SWEETEN TEXT MAKES YOU FLUFFY AND THEN HALF A TEASPOON OF CINNAMON SO WE’RE USING FUJI APPLES YOU COULD DO GALA APPLES HUH. I WENT DOWN TO T.S. SMITH’S WE’VE PICKED UP SOME APPLES FROM BRIDGEVILLE AND USES A LITTLE SOCCER APPLE MICE EATING APPLE MAXWELL AND THE DELAWARE GRAM AND THEY’RE DOWN THAT’S IMPORTANT. ALL RIGHT WE’RE GONNA HAVE MILK THERE’S A HALF A CUPCAKE. SO I KIND OF SPRINKLE I MIX IT TOGETHER. AMANDA WE’RE GOING TO SPRINKLE IT JUST AROUND THE PAN WITH A PIE PLATE PIE PAN IT’S GLASS SO IT’S LIKE WELL AND IT GIVES YOU THE OPPORTUNITY TO SEE IT WHEN IT’S DONE AND YOU GO TO FLIP IT OVER AND LIKES TO GO SCOTT SPRINKLE THAT THAT IN THERE. YEAH WE’RE GOING TO MIX A HALF A CUP OF FLOUR. THANK YOU FOR MEASURING THESE ALREADY BECAUSE YOU’VE SEEN ME MEASURE HAS THAT PERFECT PERFECT. OK. WE’VE GOTTEN APPLE. YEAH. THIS IS A NICE LITTLE DEVICE. IT IS IS APPLE PURE CORE BECAUSE I DON’T LIKE TO TRY AND GET THE CORE OUT AND DEPENDS ON THE HARDEST. THE APPLE HOW WELL LITTLE GIRLS WE’VE GOT A WHOLE AND IT’S REALLY JUICY APPLE APPLE IT’S ALL RIGHT. WHEN I DO THIS IT CALLS THE KIDS INTO THE KITCHEN BRING ME WE GIVE IT TO ME LIKE SAY YEAH I’LL BE NIBBLING ON THAT PIE YES THAT’S MINE I’M CLAIMING THAT WE HAVE OUR CORE AND THERE WE GO. ALL THAT THAT’S SO NICE. OK. SO WHAT YOU GONNA DO WITH THAT. SO WE’RE GONNA TAKE. I ALWAYS TAKE HER ON AND THIS WE CAN SEE WHAT YOU’RE DOING WHEN THEY’RE SO WE’VE CAUGHT THAT WE’RE GONNA PUT IT IN HERE. HOW EASY IS THAT. I MEAN WE’RE JUST LATER LAID AROUND DOES IT HAVE TO BE A PATTERN OR ANYTHING AND YOU HAVE HER SORT OF LIKE THE MOON THE MOON BY YEAH. SO WE’RE GONNA NEED A QUARTER TEASPOON OF SALT. I DIDN’T MEASURE THIS OUT FOR YOU BUT ARE GONNA MAKE ME MEASURE I AM GOING TO MAKE SURE ALL RIGHT WELL WE’RE GONNA CONTINUE TO PUT THIS TOGETHER AND HE’S GONNA CONTINUE TO MEASURE AND THEN WE’RE GOING TO COME BACK AND FINISH IT UP D’AMATO. AND THEN JIMMY MADE THE SPATTER WHISKEY THE BATTER WITH THE OTHER JUST POUR THAT ON IT OVER AND IT DOESN’T IT TAKES NO TIME. NOW YOU’RE ACTUALLY PUT THIS IN THE OVEN WE ARE GOING TO PUT IT IN AT WHAT TEMPERATURE 400 DEGREES AND IF YOU HAVE A CONVECTION OF NEWS WANT PUT IT 25 DEGREES 25 DEGREES FOR ABOUT HOW LONG YOU SIT IN FOR 30 TO 35 MINUTES. DO YOU SEE IT PUFFED UP AND GOLDEN BROWN AND GOLDEN BROWN OK SO WE’LL PUT THAT IN OUR RIGHT AND OF COURSE OUR OVEN. IT’S A MAGIC OVEN WE HAVE A MAGICAL HERE WE GO NOW WE HAVE TO EXPLAIN IT SHOULD BE A LITTLE PUPPY THEN WHAT YOU’RE GONNA SEE HERE RIGHT. BECAUSE WE KIND OF WE FIT IN HERE. SO FOR US HOW LONG IN THE OVEN. YOU SAID 30 TO 35 MINUTES. SO THEN OBVIOUSLY YOU HAD ONE FOR US BECAUSE WE WOULD HAVE 30 SOMETHING SHOW RIGHT. BUT FOUR MAJOR ORCHARDS AND SO IT’S A GREAT TIME TO GET OUT WITH YOUR FAMILY AND EXPERIENCE THE APPLE ORCHARD AND THE WITH YOU. SO IT’S GOING LIKE A LITTLE BOY I’M NOT POINTING OUT THAT SHE GAVE ME MORE THAN SHE DID USUALLY BUT I JUST THANK YOU LIKE YOU CAN EAT. I DO LOT YOU KNOW THIS AND LISA WAS POINTING OUT HOW EASY THIS IS AND HOW DELICIOUS IT TURNS OUT. OH YEAH UH YEAH. SO IT’S GOOD TO BE BREAKFAST TOMORROW COULD BE DINNER TONIGHT.
