Oyster pancakes are a popular home-cooked dish in Xiamen, a coastal city in southeastern China. You can find them at street food stalls all over the city. We met a man who’s been serving up oyster pancakes for almost 40 years.
This is the first episode of our new six-part series about established mom-and-pop eateries in China. In the next episode, we’ll head to another local favorite in Xiamen, where the famous dish is sweet and sour pork. Stay tuned!
