SUMMARY:
– Take a medium-sized bowl and whisk together the flour, sugar, baking powder, and salt. Warm the milk in the microwave until it’s lukewarm. Take one more bowl and whisk the milk, egg, vanilla extract, and melted butter until all the wet ingredients are well-combined.
– Take the bowl with the flour mix and make a hole in the middle. Pour the milk mix into this hole and stir until it all comes together. If there are small lumps in the batter, don’t fret, that’s the way it should be. One of the main rules of making good pancakes – do NOT over-mix the batter!
– Brush the skillet with a bit of melted butter, pour approximately one-fourth of a measuring cup of batter onto the frying pan, and spread it into a 4-inch circle. Now, your main task is to not get distracted.
– As soon as the edges start to look dry and bubbles begin to appear on the surface of the pancake, turn it over. It normally takes about 2 minutes. After that, cook the pancake for another 2 minutes on the other side until it’s golden-brown, and its middle is cooked.
– The main ingredients for crepe batter are eggs, flour, and some liquid. One of the most popular ingredient ratios is 3 eggs, one and a half cups of milk or water, and one cup of flour. Also, you’ll need to add some sugar and salt to your taste, and a bit of melted butter.
– Put all the ingredients in a blender and blend them together at a low speed for about 10 seconds.
– Take about one-fourth of a cup of batter and pour it into the frying pan, then immediately swirl the pan in a circular motion so that the batter covers the whole bottom part of the skillet evenly.
– Cook the crepe until it turns golden brown on the bottom, then, with the help of an offset spatula, lift the edge of the crepe, grab it with your fingers, and flip it to the other side. You have to be lightning-fast – otherwise, you’ll burn yourself!
– If you want to make your crepes gluten-free, you can easily use buckwheat flour instead of the all-purpose one. In this case, your crepes will turn out even more delicate, but the taste will be mostly the same.
– Always mix your dry and wet ingredients separately, and only after that, add the wet to the dry. This way, you’ll get fewer lumps.
– While preparing the batter for pancakes, add a splash of sparkling water. The bubbles will lighten the batter and make your pancakes mega-fluffy!
– If you got too enthusiastic and cooked too many pancakes, you can freeze them without any problems. Just remember to put sheets of baking paper between the pancakes.

Hey, guys!
Today we’ll talk about…
Wait, what’s that heavenly aroma?
Can you smell it?
Right, how could I not recognize the mouthwatering
smell of freshly made pancakes?
You know what?
Forget all about the stuff I wanted to tell
you!
Let’s focus on how to make the world’s best
pancakes!
Here are several simple recipes, as well as
unexpected, but efficient cooking tips!
Fluffy, Fluffy Pancakes
This recipe has a number of serious advantages.
See for yourself:
– It’s simple, and even a beginner will be
able to start their day with delicious, fluffy
pancakes.
– To make them from scratch, you’ll need just
a few ingredients which you’re likely to have
in your kitchen right at this moment.
– You won’t have to spend hours on cooking
– the total cooking time (including preparation)
is about 20-25 minutes.
So, to make 4 servings of 2 pancakes each,
you’ll need:
– 1 and a half cups of all-purpose flour;
– 1 and a quarter cups of milk, either dairy
or non-dairy;
– 1 tablespoon of baking powder (you can replace
it with 3/4 teaspoon of baking soda, but in
this case, you’ll have to use buttermilk or
sour milk instead of the ordinary one);
– 2 tablespoons of sugar;
– half a teaspoon of table salt or fine salt;
– 1 large egg;
– 1 teaspoon of vanilla extract;
– 4 tablespoons of melted butter.
As soon as you prepare everything you need
for your pancakes, time to get down to work!
– First of all, take a medium-sized bowl and
whisk together the flour, sugar, baking powder,
and salt.
– Warm the milk in the microwave until it’s
lukewarm.
Keep in mind that the milk shouldn’t be too
hot; to check it, dip your finger inside the
cup – you should be able to keep it there
for at least 10 seconds.
Warning!
Use only clean fingers.
– Take one more bowl and whisk the milk, egg,
vanilla extract, and melted butter until all
the wet ingredients are well-combined.
– Get a large skillet and warm it over medium
heat.
A good way to check whether it’s ready to
use is to splatter a bit of water onto the
pan.
If the water starts to move around the pan
and evaporates, the skillet is hot enough.
– Take the bowl with the flour mix and make
a hole in the middle.
Pour the milk mix into this hole and stir
until it all comes together.
If there are small lumps in the batter, don’t
fret, that’s the way it should be.
One of the main rules of making good pancakes
– do NOT over-mix the batter!
– Brush the skillet with a bit of melted butter,
pour approximately one-fourth of a measuring
cup of batter onto the frying pan, and spread
it into a 4-inch circle.
Now, your main task is to not get distracted.
As soon as the edges start to look dry and
bubbles begin to appear on the surface of
the pancake, turn it over.
It normally takes about 2 minutes.
After that, cook the pancake for another 2
minutes on the other side until it’s golden-brown,
and its middle is cooked.
– Serve the pancakes right away, along with
some butter, maple syrup, or berries.
Bon appetite.
But what’s that I hear?
You’re not a fan of pancakes?
Ah, I see, crepes are more your style!
No worries, you’ll get your crepe recipe in
no time, but first, let me tell you how you
can make your pancake routine more fun!
– Add a handful of chocolate chips, berries,
or nuts while preparing the batter.
For example, put fresh blueberries to get
blueberry pancakes or banana slices for banana
pancakes.
– Make your pancakes more on the healthy side
by reducing the amount of sugar you put in
the batter, or adding several spoonfuls of
oats or flax seeds.
– To make vegan pancakes, skip the egg part,
use coconut oil instead of butter, and almond/coconut/oat
milk instead of the regular one.
– And how about gingerbread pancakes on Christmas
morning?
All you’ll need to create a holiday atmosphere
is to add some spice to your life!
And I mean it literally.
Write this down:
– 1 teaspoon of cinnamon;
– one-eighth teaspoon of cloves;
– one-eighth teaspoon of nutmeg;
– three-fourth teaspoon of ground ginger.
Add these ingredients to your batter and enjoy
the Christmassy mood, even on a summer day!
Delicate French Crepes
Ok, now, as promised, let’s talk about those
French crepes you love so much!
They’re much thinner, larger, and way more
delicate than pancakes.
Good news: even though they take a bit longer
to make, the preparation process isn’t rocket
science!
The main ingredients for crepe batter are
eggs, flour, and some liquid (either water
or milk).
One of the most popular ingredient ratios
is 3 eggs, one and a half cups of milk or
water, and one cup of flour.
Also, you’ll need to add some sugar and salt
to your taste, and a bit of melted butter,
which will make your crepes more tender.
– Put all the ingredients in a blender and
blend them together at a low speed for about
10 seconds.
– Now – and this point is very important – cover
the batter and let rest for 30 minutes to
one hour.
– When it’s time, preheat a large non-stick
skillet over medium heat and butter it.
– Take about one-fourth of a cup of batter
and pour it into the frying pan, then immediately
swirl the pan in a circular motion so that
the batter covers the whole bottom part of
the skillet evenly.
– Cook the crepe until it turns golden brown
on the bottom, then, with the help of an offset
spatula, lift the edge of the crepe, grab
it with your fingers, and flip it to the other
side.
You have to be lightning-fast – otherwise,
you’ll burn yourself!
– Wait until the opposite side turns as golden
as the first one and transfer the crepe to
a wire rack.
Now, the tastiest thing about crepes is certainly
the filling, right?
So, here are some ideas about what to put
on or inside a crepe!
– Maple syrup;
– Nutella and sliced strawberries;
– Mascarpone or sweetened cream cheese together
with berries;
– Lemon curd;
– Yogurt;
– Chocolate sauce;
– Banana slices and caramel sauce.
Yummy!
If you want to make your crepes gluten-free,
you can easily use buckwheat flour instead
of the all-purpose one.
In this case, your crepes will turn out even
more delicate, but the taste will be mostly
the same.
And finally, here are several tips that can
make your cooking process easier and your
breakfast tastier.
– Always mix your dry and wet ingredients
separately, and only after that, add the wet
to the dry.
This way, you’ll get fewer lumps.
– While mixing the ingredients, opt for a
whisk rather than a silicone spatula or a
wooden spoon.
It’ll help you to incorporate more air into
the mix.
– While preparing the batter for pancakes,
add a splash of sparkling water.
The bubbles will lighten the batter and make
your pancakes mega-fluffy!
– Instead of using butter in your frying pan,
choose sunflower or grapeseed oil.
They’ll prevent your pancakes or crepes
from sticking to the skillet just as well
as butter, but won’t make your kitchen so
smoky.
– To grease your frying pan evenly, use an
oiled paper towel or a silicone brush.
– If you want to have equal-sized pancakes,
measure out the batter with an ice-cream scoop.
– If you got too enthusiastic and cooked too
many pancakes, you can freeze them without
any problems.
Just remember to put sheets of baking paper
between the pancakes.
When you’re ready to finish up your stash,
heat them in the oven for 8 to 10 minutes
at 350 degrees F.
Do you know any other pancake recipes or tricks
that can make them taste even better?
