Soooooo, I have been cooking and filming A LOT lately.

I’ve been creating something brand new, just for you…

…and I have loved every single yummy minute of the process.

Bellies are full and well-nourished.

The recipes I filmed are very different from the last time I filmed an online cooking class.

This time I have created and filmed 50 gluten-free, dairy-free refined sugar-free & vegan recipes for you at home.

And it’s actually called GLUTEN FREE AT HOME

The inspiration behind all these recipes is Scott, my husband, who is working on healing his microbiome. (Gut bacteria)

Because of high levels of stress Scott has been in (actually we choose to be in stress) – the gut microbiome has been affected.

Basically, where thoughts go energy flows.

Get the stress under control and flood the body with nutrients, from there the guts Microbes heal in time.

So, here is this weeks video and recipe. It’s a fabulous creation from my very soon to be released Gluten Free At Home – Online Cooking Class.

Kimchi Pancakes for you… BOOM!

~INGREDIENTS~

For the Dressing
1 Tbsp Maple Syrup
1 Tbsp Tamari
1 Tbsp Sesame Seed Oil
1 Tbsp Ginger, grated
1 Tbsp Umeboshi Plum Vinegar
For the Pancakes
1 cup Gluten-Free Flour*
1 cup Water
1/2 tsp Salt
1/2 tsp Black Pepper
2 Large Spring Onions, thinly sliced
1 1/2 cups Kimchi, roughly chopped
2 Tbsp Coconut Oil
1 tsp #JOY
*If your GF flour doesn’t have a raising agent, add 1 tsp baking powder or bicarb soda
For the Garnish
Fresh Coriander
1/4 Purple Cabbage, roughly chopped
1 Red Chili, sliced

~METHOD~

To prepare the dressing:
Whisk together all the ingredients and set aside.
To prepare the pancakes:
Mix together the flour, water, salt, and pepper.
Add the spring onion and kimchi and stir to combine and until a batter is formed.
Taste and season if needed.
Heat a pan on medium and add the coconut oil.
Pour 1/3 cup of the batter and cook for 2 minutes.
Flip and cook on the other side until brown.
Repeat with the remaining batter.
Top the pancakes with the garnish, drizzle with the dressing and serve.

0:00the inspo for this dish came from Yvette0:03who works at FM TV I know right it’s an0:07amazing channel it’s like the Netflix of0:10help get in there it’s amazing and she0:13wrote it on the list of things that I0:14should make and I was like oh wow0:17kimchi pancakes never done that before0:20so yeah they’re amazing they’re normally0:22made with yucky ingredients – blah blah0:23blah anyway this is for you my friend0:26and for you at home as well because this0:28is epic and I’m so glad she suggested it0:31I’m just so stoked so you need some0:34kimchi now remember these are pancakes0:37so it’s kimchi pancakes but a lot like0:39that the sweet maple syrup ice cream and0:44all the things is a completely opposite0:46these are incredibly good for you they0:49have a I know a depth to them and I0:52think it’s cuz of the kimchi right0:54the kimchi just really brings it home so0:56these are a savory pancake and they’re0:58divine and they’re very very very simple1:00so firstly I have my barbecue plate on1:04right it’s there and I’m just imagining1:07myself at home and I have a barbecue1:10which is awesome you might not have a1:12barbecue you might just have a normal1:14frying pan totally fine I love to cook1:17like this because it’s easy to wash up1:18and I love easy things to do because I1:21don’t want to do dishes and all the1:22things right I just put it on the1:23barbecue and off you go this is what you1:25need you need some flour which I’ve got1:27some gluten-free flour that already has1:29a raising agent in there so I don’t need1:31to add a raising agent in there if you1:33were to buy just a normal gluten-free1:35flour without the raising agent you can1:37add one teaspoon of bicarb or baking1:42soda or baking car one of those you need1:46a bowl and what else do we need some1:50water1:51which we have on tap here and some flour1:55so I put the flour in my bowl and I’m2:01gonna cut up these amazing spring onions2:03but you just come out of the garden2:04actually I’m just taking the roots off2:07and the spring onions I’m gonna give it2:09a really yummy flavor2:12adding to the kimchi2:13spring onions a lovely and sweet and2:15delicious there’s something about them2:18they’re just delicious so you’re just2:20gonna cut these into little ringlets2:24okay we’re ready to go just run your2:28knife through if there’s any chunky bits2:30around you’re going to need a whisk and2:37some salt and pepper2:39remember these are savory pancakes just2:44awesome and you want to make a batter2:47with this flour just like you would2:54okay cake at home but what do you do to2:56hide would be milk or a nut milk or2:58something like that so we’re using water3:01make sure you get all these lumps out I3:05can hear the rain and every time it3:08rains it makes me happy because every3:10farmer is having some water on their3:12veggies and I think it’s a beautiful3:13thing also makes me feel very cozy as3:16well so have a look at my pancake batter3:23that’s the consistency you want to get3:26depending on your flour okay so I’ve3:28used a really great mix of flowers which3:31I bought which is a Bob Red Mills brand3:33and it already has a raising agent in3:35there you might have another brand you3:38might need less water or you might need3:39water it just depends but you’re after3:41this battery consistency and make sure3:46you get all those lumps out okay gonna3:50add my spring onions with that aside I’m3:53gonna get my kimchi now this is just a3:56homemade kimchi to buy kimchi make sure4:00you buy something from a health food4:02store for an artisan from an artisan4:04down at a farmers market because a lot4:06of the kimchi’s out there are filled4:09with fish sauce and a really crappy soya4:11sauce so really look for something in4:14its purest form a kimchi should be just4:16salt and vegetables a little bit of4:19ginger sometimes a little bit of4:20turmeric and that’s kind of really if4:21it’s in that kind of Whole Foods range4:23it’s not full of fish sauce or you know4:26a really4:27poor quality soya sauce beautiful color4:30from the chilli so just run your knife4:35through okay it’s gonna go into here how4:47easy this this is makes a great snack or4:50if you’re really transitioning into a4:57value system around whole food this is5:03something to really kickstart that5:06process because it’s easy and it’s5:07delicious and easy the key now give that5:11a really good mix and look at the color5:14coming through now notice that there’s5:16no egg in there there’s no dairy in5:17there really easy ingredients through5:21fast on the Run ingredients very very5:24fast recipe taste Oh YUM I need a bit5:30more salt and a bit more pepper and you5:32probably will to read another stir and5:35let’s go over to our barbecue plate now5:40it is smoking and the last thing I want5:43to do is pour oil all over that it’s5:46just really unnecessary so this is a5:47little trick that I’ve learned over the5:51years with cooking which is great and5:55passing this on to you because a lot of5:57people just think oh they need a lot of5:58oil so I grab a couple of paper towels6:01and some coconut oil if I can undo it6:05and I hope it’s coconut oil wait for it6:06wait for it yes it is and I just pour6:10some of that on here and just rub my6:14barbecue plate and yes it is smoking and6:17I want it to be quite hot but it’s not6:19going to be as hot as you think because6:22when I put these pancakes on there6:24you’ll notice they won’t burn pretty6:27deceiving cast iron okay6:34smokin baby are we ready yes good just6:45make them nice and big – YUM okay now we6:52want them to go nice and brown on the6:55bottom so a couple of minutes on each6:59side is enough haha7:03YUM let this cook okay allow it’s on low7:09it’s smoking a little bit but it’s not7:11burning trust me let me show you burning7:16not great so they’re just gonna cook and7:20I want to make this a lovely little7:21dipping sauce to go with this I love7:24this some crushed ginger which I have7:26just here some lovely ginger what I like7:31to do with my ginger and I encourage you7:32also at home to do this it’s don’t peel7:35it just give it a good wash and grate it7:40now these are great graters get it see7:44the joke hear the thunder and the joke7:45all at the same times these are great7:47graders like these things nice and fine7:52recording microphone they’re lovely but7:56you can get them out there now they’re7:58still cooking over there and I’m not7:59panicking it’s on a low heat I know my8:01pan you know I know my barbecue plate I8:04know my stove so get comfortable with8:06your stove and your frying pan or or8:09grill or barbecue plate okay add that8:14beautiful fresh ginger you’re gonna need8:16some on Bashi upon vinegar tamari maple8:20syrup and lastly for that savory8:23component some beautiful sesame seed oil8:27I’m just gonna add that next step8:30now come back over here and let’s have a8:33look at these babies and see how they’re8:36going you can just see how the bubbles8:38are sign-up form in the Merced before8:41this is not burning even though it was8:43smoking8:44have a look how’s that looking under8:48there beautiful color it’s gonna flip8:55the rest of these oh that little great9:00you’ve impressed myself some good hey9:03really impressed myself9:05pumpkins behind the camera it’s got to9:07be hon that camera ruins me I like that9:09camera nervous over there jurors over9:11there Millie’s over there and I’m here9:14where am i okay here we go so I’ve got9:19my tamari my own bushy fun vinegar on9:23bushy fun vinegar it’s a beautiful9:25vinegar there’s something about it very9:27different to the balsamic vinegar apple9:29cider vinegar rice wine vinegar red wine9:32vinegar it’s very very different on9:33Mombasa climbers like a salted fermented9:36plum and when you smell it it’s really9:39salty it actually makes me salivate it9:42kind of swaps out the flavor of fish9:44sauce so if you’re using fish sauce in9:46things out there this is a great swap9:48over because it has the acidity as well9:50as the saltiness it’s quite genius9:51actually9:52I’ve got some lovely maple and then I9:56want that beautiful sesame seed oil just9:58to bring this home and give this a stir10:05and they’re still cooking to my right10:08and this is the car that’s about cooking10:10knowing your kitchen knowing your your10:13pan knowing your stove really important10:18ok perfect10:20this sauce is just gonna bring these10:23pancakes at home there’s something sweet10:27salty almost like so much fragrance from10:33the ginger it’s just it’s just gonna10:35marry so well with this kimchi cuz this10:37kimchi has ginger in it and Chilean oh10:39it’s just yummy and delicious ok back10:43over here checking our pancakes out10:47there looking good actually looking10:50really good I’ve only turned them once10:55right11:01this is how they haven’t burned see that11:04like that stove was smoking right and11:06look this is a thing get to know your11:09equipment11:09get to know your pant understand you11:11don’t need to pour oil all over11:13everything just allow it to be and let11:16these cook for a little bit longer and11:18we shall wait turning off my stove and11:23these are ready I just want some chili11:26to cut up with this and I also have some11:29purple carriage cabbage that I finally11:31sliced and I put in some water and put11:35in the fridge why did I do that you’re11:37asking because I want it to be really11:38crisp and fresh and it is really crisp11:41and fresh when you cut it really thought11:43finely and put it in ice water it has it11:46holds its freshness and I want that11:48crunch with the with the pancake so I’m11:52just gonna leave that there look at it11:53look how crisp and fresh that is it’s11:56quite amazing and I just want a little12:01bit of chili because I want a little bit12:05more heat and we’re ready to rock and12:08roll I also want some coriander leaves12:12cuz I have them and this will just bring12:15things home it’s all the little12:17components that I’m showing you and12:19teach you that just make things come12:21together and it’s glory oh my goodness12:23it’s so good it’s that good those little12:27bits and pieces that I learn all these12:29years training is a chef and working in12:31health retreats are working my own12:33health retreats and teaching and12:34facilitating and training chefs it’s12:36just those bits that really you know12:39master it that rain is coming down it’s12:42beautiful it’s very very beautiful okay12:48three hot yummy delicious gluten-free12:51pancakes12:51kimchi gluten-free pancakes I must say12:55and I definitely want some cabbage on13:01top and here we go here comes the Chevy13:05in me I can’t help it this is the thing13:10cabbage is the most underrated vegetable13:13on the planet we don’t walk in a13:14shopping centre with our shopping13:15trolleys going on I’m gonna take a big13:17cabbage today we just don’t do that it’s13:19it’s just such a great vegetable at last13:21so well in the fridge it’s just quite13:24amazing and the more of it the better I13:25say just mix that through and you want13:32to Chile oh the Chile for me is just a13:36must this is very mild chili as well and13:38then we want a little bowl of this13:42deliciousness here on the side YUM this14:01is it this is the this is the gig I14:03listened to that Thunder perfect timing14:05perfect timing you want to get a little14:17bit that Chile and a little bit of that14:19coriander in there and kind of that14:22sauce oh man all the flavor it just14:36seriously smacks you in the face14:38with flavor like seriously smashed you14:40in the face with flavor that sauce just14:41rings at home mmm YUM14:53this one’s for you of it thanks for the14:56recommendation can’t wait for you to try15:00it oh my gosh I can’t
