How to Make Gluten-Free Caramel Banana Pancakes -From Scratch!

What’s a more delicious way to start your mornings than Banana Caramel Pancakes- did I mention they are quick and easy to make.

For the Pancakes
You’ll Need two bowls, one for your dry mix, one for your wet mix, a spatula, a whisk, and a pan.

Dry Mix

Rice Flour 60g
Potato Starch 10g
Tapioca Starch 20g
Xantham Gum 1g
Salt 1g
Baking Powder 3g

Wet Mix

Agave Nectar 10g
Rapeseed Oil 20g
Milk/Non-Dairy Milk 150g
Eggs 100g

Add Wet Mix to Dry Mix all at once, mix well and hard and make sure the mix is free of lumps. The texture should be smooth and silky.

Preheat a pan on medium heat and add a bit of butter/oil and fry for about 2-3 minutes on each side.

Coconut Palm Sugar Caramel Sauce
Coconut Sugar (raw) 180g
Water 40g

Salted Butter 40g
Double Cream 200g

In a sauce pan, make a caramel with the sugar and water. When it reaches a nice dark caramel colour, add butter, stir
Add Cream over 2 or 3 times, first a little, then more- it will bubble and release lots of heat
Mix with a spatula until consistent and uniform in texture
Pour in a container to cool down
You can use this straight from the jar once it’s cooled down

Banana Pancake Recipe
Fresh Banana 160g
Salted Caramel 50g
Banana Chips 20g
Coconut Sugar 5g

Make pancakes. Build pancake with layers of pancake covered with caramel sauce and fresh bananas, add more pancake and repeat. Finish with banana chips and sprinkled coconut sugar.
