How to make FLUFFY SOUFFLE PANCAKE

* Ingredients:
Egg white 2, Sugar 25g
Egg yolk, Milk 20g, Cake flour 30g, BP 3g, Vanilla extract
Butter, Sugar powder

1. Separate egg whites and egg yolks into two different bowls. Beat egg whites. Gradually add in sugar.
Continue to whip the egg whites.The egg whites will become glossier and firmer.
2. Add milk and vanilla to the egg yolks and whisk. Sift the cake flour and baking powder into the bowl.
Whisk to combine thoroughly.
3. Using a rubber spatula, scoop about 1/3 of meringue into egg yolk mixture and gently fold almost combined.
Repeat with half the remaining meringue until almost combined, then fold in the remaining meringue just until no streaks remain.
4. Heat up a large frying pan over low heat. Very lightly brush with butter or oil and use a paper towel to rub it around.
Using an spoon, scoop the batter onto the pan. Cover and cook for 5 minutes. Remove the lid and use a spatula to gently peek under the pancake.
Cover and continue to cook for 5 more minutes.
The pancakes will grow even taller and fluffier when they’re done.
Once the pancakes are golden and cooked through, gently remove and serve on a plate with powdered sugar and butter.

First, beat egg whites
Add the sugar a bit at a time, 2~3 times divided
Make meringue firmly
Lightly whisk the yolk
Add milk and vanilla essence
Sift cake flour and baking powder
to eliminate and prevent lumps

until we cannot find flour
Pour about ⅓ meringue and mix well with yolk
Mix the second meringue more carefully than first one
to maximize the volume of pancake
mix with spatula like cutting
softly until you cannot find meringue
on low heat
butter or vegetable oil
coat the pan wipe with paper towel
put the mixture round and thick
must be thick
So firm meringue is important
This recipe is for 3 pancakes
but just one serving, for me. haha
with lid for 5 minutes
I did with the other pan because could’t find lid…
they swell! slightly
Turn them over carefully

They look soft
You can serve them with cream or fruits
I did with butter and sugar powder simply
