Ingredients

1 cup all purpose flour
1 cup cake flour or (whole wheat flour for healthier pancakes)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 cups buttermilk or 2 cups milk
1 tsp vanilla
1 tsp maple extract (optional)
2 eggs, white and yolks separated
3 tbsp melted butter
3 tbsp sugar
Garnish with your choice of syrups and toppings

Directions

Sift together all dry ingredients: both flours, baking soda, baking powder and salt into a large mixing bowl.

Separate the eggs, putting the whites in a mixing bowl you will use to make the meringue.

Add the yolks, milk vanilla and *maple extract (optional) to a bowl and mix until well combined.

Melt the butter in the microwave, then add to the milk mixture.

Make a well in the center of the dry ingredients and pour the milk mixture into it. Mix both sets of ingredients together but do not over mix. Lumps are ok.

With a hand held mixer or a whisk beat egg whites until frothy, gradually adding sugar until you get a peak on the whisk.

Fold in 1/2 of the meringue to lighten up the batter and make the super fluffy. Then fold in the other 1/2 just until you no longer see streaks of meringue. Do not over mix.

Cook the pancakes in a nonstick skillet over medium to med-low heat, Place 1 tbsp of oil in the pan. Do not add more oil in between batches.

Once the edges begin to dry and the bottom is golden brown flip pancake and cook until golden brown on the other side.

Repeat process until batter is used up.
