Banana Pancakes
Ingredients:
2 small or 1 medium bananas
1/2 cup flour
1/3 cup coconut milk
1 egg
1 tbs sugar (optional)
⅛ to ¼ tsp baking soda ( do not use lime powder as substitute)
Vanilla if desire (omitted on this video)

Method:
Mashed banana on a plate using fork. Set aside

In a medium size bowl, mix flour and and coconut milk making sure that there were no lumps by using a small white or silicone whisker, then add egg and whisk again until well combined.

Add sugar if desire, add baking soda and fold until all batter are well mix together. The batter should be thick but you’re welcome to thin the batter out if u would like but it will be runny when cooking. So make sure to follow this direction.

Set aside while you heat the pan or griddle.

Brush pan with butter or oil then scoop about 1/4 cup batter onto pan. Cook batter for 1-2 mins until golden brown and bubbles started show along the surface. Then flip the the pancake and cook for about a min. Repeat the process until all batter has been used.

Serve pancake with syrup, butter, jam or just plain.
