Greek Yogurt Pancakes (Coconut Flour) || The Keto Kitchen

[RECIPE BELOW] Greek Yogurt Pancakes.

These are super simple to make, they are thin but they are also quite fluffy at the same time.
They’re really really nice with some keto friendly syrup and butter slapped on top!

| The Recipe |

INGREDIENTS:
– 2 Eggs
– 56g (2oz) Greek Yogurt
– 1/2 tsp Baking Powder
– 1 tbsp Coconut Flour
– 1 tbsp Sweetener (I used Erythritol)
– 1/2 tsp Vanilla Extract
– OPTIONAL: A Pinch of Xanthan Gum
– Butter, for frying

METHOD:
1. In a large bowl, add the eggs and whisk until they are pale and frothy.
2. Add baking powder, coconut flour, and sweetener. Mix until well combined. Add the greek yogurt and vanilla extract (and xanthan gum, if using). Mix until well combined again.
3. Place a pan on a low heat and leave for a few minutes to heat up. (A medium sized pan will make 2 pancakes, a small pan will make 4 pancakes)
4. Once heated up, add about 1/4 tsp of butter, leave to melt. Once melted, add pancake batter until you’ve just coated the base of the pan – IF YOU DO IT TOO THICK, THE TOP WILL NOT COOK ENOUGH TO FLIP BEFORE THE BOTTOM BURNS.
5. Cook until the edges have cooked and the top/middle is no longer completely liquid. Flip the pancakes over and cook until the bottom is completely solid and browning. Remove from the pan.
6. Repeat from step 4 until all pancake batter has gone. Enjoy!
