Fluffy Chickpea Oat Pancakes (Gluten Free, Vegan, High in Protein)



Up until finding this recipe, making a good, fluffy gluten free vegan pancake was my kryptonite. I had so many spoiled batches I can’t even count how many! I am so happy to say that this recipe has worked over and over again and continues to make me happy every time I make it! Recipe below:

Recipe:
1 cup chickpea flour
1/2 cup oat flour (I grind up oats in my Vitamix to make flour)
2 teaspoons baking powder
1 teaspoon cinnamon 
1 Tablespoon arrowroot starch 
1 Tablespoon coconut sugar
Pinch of sea salt
1 teaspoon pure vanilla extract
3/4 – 1 cup plant based milk (depending on thinness of milk) 

You need a frying pan/skillet and a “grease” (vegan butter, coconut oil, canola oil) if not using a non-stick pan.

In a medium bowl combine chickpea flour, oat flour, baking powder, cinnamon, arrowroot starch and coconut sugar. Add vanilla and milk until desired thickness (not too thick, not too thin).

Set aside for 5 minutes to thicken. In the meantime, heat up your frying pan to medium-high and melt your desired “grease.”

Pour batter onto pan and flip when it bubbles nicely.

Makes 7-8 medium pancakes.

Protein content:
21g of protein in 1 cup of chickpea flour
10g of protein in 1/2 cup oat flour 
= about 4.4g of protein in each pancake (if making 7 pancakes)
