Bushman Pancake – Campfire Cooking

welcome back everyone hope you’ve all
been doing well one of my recent camping
trips I cooked up a breakfast that I
called the Bushman pancake and since
then I’ve got a lot of requests to make
a video specific to that meal and how to
cook it
so that’s all we’re gonna be doing today
first things first and build up a nice
bed of coals a bed of coals will provide
a more consistent cooking temperature
and it’s far easier to maintain than
cooking over flames next I peel my
potato this is a russet potato but I’m
pretty sure most potatoes will work for
this once the potato is peeled I use a
grater to shred the potato I grate the
potatoes into a bowl with water in this
way the shredded potato lands in the
water which prevents it from turning a
brown color and after I’m done shredding
it I can wash the potato in that same
water so to wash this potato I just use
my hands mix around in that water just
to try to wash as much of that excess
starch off of the potatoes as I can this
will just help to gonna crisp your
potato when we cook it and I drain off
all the all the water and you want to
try to get as much of that water off as
you can because the drier your potatoes
are the crispier they’re gonna get you
can see just how nice and try those
potatoes look they’re light fluffy
they’re not really sticking together
that’s what you want
so once the prep work for the potato is
done we’re ready to start cooking the
bed of coals looks good I lay in two
logs to rest my pan on and we begin
cooking the bacon I like to use a nice
thick cut bacon and it just allows me to
get a crispy cook on the outside but the
inside still remains soft and chewy
which is my preference for bacon and
once that Bacon’s done cooking take it
out from the pan you want to leave that
bacon grease in the pan that’s what
we’re gonna fry our hashbrowns in and
frying the hashbrowns in that bacon
grease gives it a really really awesome
flavor makes for just a delicious hash
brown Patty and I laid the hash browns
in that pan I try to keep it at a
consistent width in that pan so they
cook evenly
and then using my spatula I just tuck in
little straight edges create a nice
uniform circular shape and my pan and
then we drop a couple of blobs of butter
on top and then the butter is nice
because it sits on top and then melts
through down to the bottom once it gets
to the bottom the pan it helps to crisp
up that bottom layer on the hashbrowns
and adds a lot of flavor as well so we
sprinkle some salt and pepper on there
and then after a few more minutes of
cooking the potato slides around in our
pan which means that it’s ready to flip
so we give it a quick flip in the pan
and you see that beautiful golden color
that’s what you’re looking for and right
away I grab my spatula and I create an
indent in the middle of that hash brown
patty which is where we’re gonna lay our
egg I mean our bacon strips of it we
already cooked lay on top of that hash
brown patty around that indentation this
will also help to hold our egg in place
and then we cracked our egg right into
the middle
and then we sprinkle some salt and
pepper on top of it give it a little bit
of seasoning and then we cover the whole
pan up with a lid or as I’m using here
another pan inverted over top and after
a few minutes of being covered up and
continued to cook your egg will be nice
and cooked once the egg white is cooked
through that’s my taking off because
typically your yolk will still be nice
and runny then and that’s the Bushman
pancake you get the hash brown bacon egg
all in one all the flavors combined and
it tastes really really delicious and
it’s really easy to make and see we got
a nice crispy crispy cook on the bacon
crispy cooking the hash browns and nice
runny yolk so that’s the Bushman pancake
