These buckwheat pancakes make the best breakfast!

I make these ahead on time and keep them in the fridge for a fuss free breakfast. Perfect for that early morning start. Just pop them in the toaster for 2 minutes to warm them up and top with whatever you like.

YOU WILL NEED:
(Makes 6 small pancakes)

⚡️½ cup buckwheat flour
⚡️½ cup of oat milk (or whatever milk you prefer)
⚡️½ teaspoon baking powder
⚡️¼ teaspoon baking soda
⚡️1 teaspoon apple cider vinegar
⚡️1 teaspoon cinnamon
⚡️1 tablespoon local honey
⚡️pinch of salt
⚡️ghee, butter or olive oil

METHOD:
⚡️Mix together all the dry ingredients.

⚡️Add in the ACV, honey and oat milk. The mixture will froth a little bit – we want this so they are light and fluffy!

⚡️Heat a fry pan on medium high. Add is some butter or oil (just enough to coat and create a non stick environment)

⚡️Once you begin to see bubbles popping and the pancake lifts easily from the pan, it’s time to flip!

⚡️Cook for about 1- 2 minutes either side.

⚡️Allow to cool and then store in a container in a fridge for up to a week (you will finish them before that – trust me!)
