hi it’s Peter Gregg Miami Florida andwelcome to Peters kitchen sit back relaxyou are about to watch a Peter Gregvideo something warm human and wonderfulhappens when you watch Peter Greg thisis Peter’s cookies in Peters kitchen Iwonder if that makes it special in anyway so this is a conglomeration of mymother’s recipe everyone else’s recipethings I’ve tried and failed at and thenfinally came up with my own recipe andI’ve actually never shared it before sonow I’m sharing it and here we go I’mgoing to start with two sticks of butterI’m using kiri cold unsalted butter sothis is basically a cup of butter and Ihave brought it down to room temperaturewhich makes it hard to get out of thepaper but once you get it in the bowlback and bowl that’s a movie anybodyremember what movie that’s from so now Igot my two sticks of sugar in here and Iam going to put one cup of brown sugarand one cup of white regularstore-bought sugar and I’ve got the twosticks of the what is it oh the butterthat’s what’s in all I had to do is lookin here to see okay so now I’m going tokind of like cream the sugar and thebutter together first I’m gonna get itas wet as possible and I started withone of these things and I don’trecommend that because now I’ve got toget it all out so that I can stir it upyou know what I need two things I need aplate a piatto sepilok Aloha and that isjust put stuff on instead of putting iton the counter that I shut that cabinetcan you tell me I didn’t okay thank youokay so I see I look to you to give me ahand while I’m in the kitchenand I’m gonna get my really goodsilicone spatula now I’m going to mixthe butter and the sugar together thatis much better you can actually use oneof those mixers what do they call thoseKitchenAid the mixers but I’m not I’mjust gonna mix it in the bowlso this way you can get yourself twosticks about our unsalted by the way yesyou’re wondering and a cup of sugar acup of brown sugar put it in a bowl IMick and mix it the only thing Irecommend is you use a big big bowl areally big bowl and the reason is it’sgonna start getting pollen here in thisbowl okay so I am mixing I just heard agood jokeand I can’t remember the whole thing andI didn’t hear it I heard it on theinternet so it’s not my joke but if Iremember it I’ll start telling it to youbut I don’t remember the whole thingjust parts of it but I do remember onething it really made me laugh at the endokay so I have put the brown sugar thewhite sugar and I’m going to put 1teaspoon of vanilla extract and 1teaspoon of lemon juice yeah I told youI was getting this stuff from otherrecipes until I finally made my own sonow I’m going to just mix that around alittle bit so it’s in here oh I’m readyand waiting okay so now I’m going totake a teaspoon of baking soda notbaking powder but a teaspoon of bakingsoda a teaspoon of cinnamon and I usethat cylons element cinnamon becauseit’s supposed to be healthier and ateaspoon of pink fine Himalayan salt nowcool and this was the brown sugar yepthere’s still some left in the boxso I’m gonna put that in thereyep I got it all out I did that just foryou guys that are wearing you know theear buds the earphones just to help youhear better make sure you’re payingattention to what I’m doing in here okayso I got my butter and my two sugars andI’ve mixed this all up put the lime inthe coconut and mix it all up okay sonow I’m ready to go on to the next stepI got two eggs over here I’ll bet youthese eggs go in here so let’s check andsee half a cup oh wait I can get to thatpart yet yes two large eggs so I’m gonnaget out of the magic drawers underneathhere I’m going to get an egg I’m gonnakind of semi beat them and then pour itall over my sugars and all over myvanilla and all over my salt I’ll putthis on this side okay this way I try tobe a neat cook a neat cook oh we canwelcome our our overhead cam I’m testinga cam to put on the side here okay sonow I’m mixing the egg in oh look atthat now it’s starting to get nice andsloppy and goopy and gloopy I use whatthey call pasteurized eggs this is notthe same thing as pasture-raised eggspasture-raised eggs means that they weresupposinglyraised in a pasture the when thechickens are allowed out in the pastureand but past your eyes means thatthey’re not cooked but they brought itdown to the right heat to actually killthe Salmonella that’s in the eggs Ilearned that from when my mother and mydad and I was doing hospice for them andI was kinda like a little weirded outthat I didn’t want them to get sickbecausethat would make things worse you know mymother was fighting cancer and stuff soI discovered pasteurized eggs andthey’re a little bit more expensive butthe main thing I look for with eggs isit’s got to have this certified humaneseal on the carton that means that theyare giving the chickens certain rules orthe hens or whatever lays the eggs sothat mmm they have more room becausethey’re all cramped together you knowthey’re born and they just they’resquished together and it’s just nothumane so certified humane on the cartonlike Eggland’s Best does not have thaton there and that’s the egg I used toget but Pete and Gerry’s does so thoseare certified humane but then there isan eggless pasteurized and the bestthing to do if you can is to pasteurizeyour own eggs if you’ve got a sous-videmachine and you’re used to using cookingwith sous-vide those of you that havenever heard of that forget about it it’sa whole new way of cooking and it’s gotnothing to do with anything I want toteach you now because it’ll take foreverbut you can pasteurize your eggs forthree hours at 130 degrees they stillcome out clear they still act like anormal egg but it will have killed theSalmonella and it’s the it’s forsous-vide it’s a different way ofcooking and it combines heat and timeand we’re not cooking the eggs when wedo that okay so what is next on the listokay so I have basically a half a cup ofold-fashioned oatsold old-fashioned oatmeal okay and I putit in the Vitamix to grind it up to makeit into a fine powder and I mix it inwith the flour so the proper way to doflour is you put it in a strainer andyou sift it and then you put it intoyour cookiesand so this is sifting it and afterabout 20 seconds it’s like no I’m notgonna do that just dump it in okay theseare cookies dude we’re not gonna gosifting into all that kind of stuffnow I’m going to gently so that I don’tmake a dust storm in here startincorporating cool word huh I learnedthat on the Food Channel we areincorporating the flour with the sugarand the eggs meaning we are stirring itup we’re stirring it up until it’s alltogether and done and I got to get itoff of the sides and get it in here nowthis is gonna start to make a nice thickcookie batter and that’s all there is tomaking chocolate chip cookies except yousay Peter but where’s the chocolatechips they’re right here I’m gonna waittill I get this all mixed up and thenI’m gonna add them last thing and I alsohave a very special ingredient this ismy vanilla I already put the vanilla andI put one teaspoon is it one teaspoonyep one teaspoon of salt one teaspoon ofbaking soda not baking powder but bakingsoda and one teaspoon of vanilla extractand a teaspoon of a lemon juice Lamonithe volume in the morning masada Italked week because my green mygrandparents were Greek they come fromCyprus and Greece and I don’t know whereover there but before I was five yearsoldI couldn’t speak English I was talkingGreek because my grandparents mygrandmother didn’t speak English so Ilearned how to speak Greek and then whenI went to school I spoke English and Iforgot the Greek so like I couldn’tspeak Greek now to make completesentences maybe here maybe there butnothing that wouldn’t make people laughat me so this is taking a little bitlonger to incorporate than I thought itwould so I’m going to keep stirring itI’m gonna try the tablespoon oh yeahthe tablespoons bettersee it’s between mixing and I’m afraidto get flower dust all over the placeokay so now it looks like I’ve pulledall the flour off the walls of this bulllike that okay good job Peter good jobso this is my base cookie dough here wego and guess what time it is now it’stime for the fun partyep it sure is now I do need to makesure just so you know that the chocolatechips are good so they’re good threecups of chocolate chips like that thisis not a job in some kind of a kitchenor something this is my own kitchen soall this business of being ultra carefuland everything the only thing is that Iam am ultra careful of his cleanlinessand contamination we don’t want that wedon’t want anybody to get sick so I havea 350 degree oven running warming upwhich is important a lot of people don’trealize the importance and I didn’teither to be perfectly honest with youof preheating an oven properly when youpreheat oven properly it makes the wallsall hot and it makes everything in theretake on the temperature kind of like theway the same way your refrigerator worksyou think the refrigerator is pumpingout cold air no it isn’t it makeseverything in it’s really cold and thenthat radiates the cold to keep the wholebox cold and that’s why you get yelledat don’t standwith the refrigerator door open okay allright so that’s it so what I’m going todo now is I’m going to take an ice-creamscooper look at that I just happen tohave one handy a handy ice-cream scooperlet’s make it look better over here andI’m going to take now if you wanted toyou could refrigerate this for like 20minutesyou didn’t if you had a bowl it was alittle smaller than this and then put itin but I’m gonna take an ice cream scoopand I’m going to basically fill it let’sswitch sides so that this way my othercamera can pick it up too so we’re goingto put one here and I put one here I’mgonna put one here I’m gonna put onehere actually this one’s a little bitclose okay so now I’m going to go putthis in the oven and what does therecipes said I would say 14 to 16minutes okay so I’ll be back in 14 to 16minutes and then you can actually seewhat the cookies look like and we’lleven do a taste yeah we’ll do a tasteI’d be right back alright I’m
