HEARTY NO-BEEF CHUNK & BEETROOT STEW RECIPE:

You will need:
2 x packs of Waitrose & Partners Vegan Marinated No Beef Chunks
2 x Veggie Stock Cubes
1 tbsp Plain Flour
1 tbsp Olive Oil
2 x Onions (sliced, or one big onion if yours is massive like our one!)
2 x Carrots (peeled and sliced)
1 x cinnamon stick, or 1 tsp cinnamon powder
180g pack of Waitrose Sweet & Spicy Chilli Beetroot Wedges (cut in half)
Mash, Veggie Dumplings & Greens to serve

Turn your oven on to 170℃ (fan oven). Heat the oil in your crock pot over the heat and cook the onions until softened and golden. Then add in your plain flour and stir for a further 1-2 mins on the heat.
Take off the heat and add your two veggie stock cubes dissolved into 500ml of water, the carrots, beetroot and cinnamon. Season well.
Put the lid on your crock pot and put it into the oven for 2 hours. Check it to see if it needs anymore water added to the mixture about halfway through.
Whilst your stew is cooking, cook up the Waitrose & Partners Vegan Marinated No Beef Chunks as per the cooking instructions and assemble veggie dumplings if you fancy them.
Once the two hours is up, add to the Waitrose & Partners Vegan Marinated No Beef Chunks to the stew, stir well and place the veggie dumplings on top. Re-cover with the lid and cook for a further 20 minutes. Then it’s READY!

THE ULTIMATE VEGAN CHOCOLATE-CHIP COOKIE RECIPE:

You will need: 
225g Vegan Butter (I used the Stork Original Baking Block)  
200g Light Brown Muscovado Sugar (or just any type of light brown soft sugar)
100g Golden Caster Sugar (or just caster sugar)
125g Sweetened Applesauce (or 1/2 Cup) with 1 tsp Baking Powder mixed in
360g Self-Raising Flour
1 tsp Cornflour
1 tsp Bicarbonate of Soda
350g Vegan Milk Chocolate (chopped)
100g Roasted Hazelnuts (chopped)

Mix the butter and sugar until fully combined, either in a stand-mixer or with a hand mixer. Once creamy, mix for a further five minutes until the mixture gets paler and light and fluffy.
Mix in the applesauce mixture until combined. Add the flour, cornflour and bicarbonate of soda and mix until just combined – try not to over mix here.
Then add in the milk chocolate and the hazelnuts and again mix until just combined.
Spoon the mixture out onto a plate into 10-12 mounds (don’t compact them down!) and put in the freezer for at least 30 minutes, or overnight.
Preheat your oven to 200℃ (if fan-assisted, if not set it to 220℃, gas mark 7 or 425℉).
Remove and cook on a foil-lined baking tray for 6 minutes, then turn the tray around and bake for a further 4 minutes until the tops are light golden. Cooking times vary so much and I found these to cook much quicker than the non-vegan version so keep checking on them until they seem a light golden brown around the edges and just cooked in the middle.
Allow to cool and firm up on the baking tray for at least 20 minutes, if not longer. ENJOY

and marinated no beefchunks it’s like that I haven’t reallyhad before and I think it’ll be like afun thing to play around with I thinkthey’ve made from seitan jackfruit andmushrooms there you go high remember by guessing years ago youknow who knew so we’re gonna startcooking it here on the stove with onionsand then we’re going to put the rest ofit in and get it kind of steady slowcooking a little bit but also a littlebit fast cooking so I’m quite hungry I’min often do you want to get going youyou guys are in for a treat hi everyonehow are you hope you’re all well everytime every time sorry I’m not feelingtoo well alone so you’ll excuse myincredible birthday Beverly back so I’mgoing to chop it on you okay so choppingonion chopped in half firstlike this like so down the middle of theof the root to the to the head of theonion yeah got that got itthen you see when you are able to thenpeel it removing all this brown skinit’s massive right huge recipe calledfor two small onions but these are Ithink one is perfectly fine when you’recut offso you make sure you keep the root on ityeah so fun fact you keep the roof on itbecause when you cut that off that’s thebit that’s from there that’s a bit thatmakes you cry Marcus Phillip all my allkind of top tip useful really usefulscope so got your onions taking theheads off you still got the roots onboth halves peel the skin off the onionand then what we do we take it this wayso head towards you route away from youand you want to like slice slice downthe middle and then slice a few of usslices but be careful not to go pastsort of this point here so the onionstays intactyou’re cutting like that so you see it’sstill intact so you get in as well andthen they come across and cut like thislook at you guysno I’m not crying obviously now you willthen get put to the point where I willstart crying in there so when you putthem in the pan you’re still in cryingprobably but you know so normally beforethe onions you would like browning yourbeef and you’d cook like a little bit offlour in and that just helps to likethicken the sauce up when she add all oflike juicy kind of stocks up in theprison blotting that when I attempt todo it the onions this could be terriblemistake marks making your face you seeto create white layer like chassis thevision and gentle white makes it alittle bit paste in a good way for thenext station assembly I’m putting in twoveggie stock cubes and this is mixedwith 500 mil you might be really happywhen you use that pirate joke why wellbecause that’s the one that I bought formy brewing beer and you were like youdon’t need to get that and I was likenow I really doso makes me really happy when you use itto carry I’m also putting in and thechopped up pack of the wages of partnersit’s the sweet and spicy chili groupthat smells incredible and because it’sgot that like hint of chili to it itjust gives the whole thing a kick whichis ordered then it said a cinnamon stickwe haven’t got one so I’m just puttingin a tiny amount of ground cinnamon likemaybe half teaspoon[Music]oh I haven’t played salt pepper inthat’s just a bit of alright can’t getclose and have a look at this because atthis point I always think it doesn’treally look like a shoe you’re like whatthe hell is that but that’s always theway with shoes right yeah put themtogether you’re like oh my god thatlooks so boring and then when they whenyou boil it quick that’s rightonce they’ve added in manova chunkswhere’s the ducklings on top oh there’ssome cheddar match I should have gotsome greens halfway that we used to haveit with broccoli another day right we’regonna stick the lid on that I’ve got theoven on 175 ish I’m gonna put this infor about an hour I think normally goesin for like a two hours you do it on thestove I just prefer to like have it inthe oven have it out the way and they’remore like assess where we’re at assesswhether we could put the no big chunksin see how I’m going have I got anycookie around my mouth no I can tellbecause you’re like so whilst the stoodwas in I just like ramped up thetemperature a little bit and I threw intwo cookies that have been freezing justas a little test to see like whathappened I’m stopped cooking them foraround nine minutes I’ve flipped aroundafter about six minutes and they are sogood I say the only difference is therea little bit fluffier a little lessdense than would not be a version buthonestly like the sort of taste is thesame text just like the different tastesactually saying and you still get thatlike super gooey ness in the middle areyou ready for this this is I’ve even wonalready this is the friend your friendyou can see from the other one are youready for the exam or what is it oh ohoh it’s not it’s not my one Ohthis hasn’t been cooling for that longso this is gonna be super gooey in themiddlelook at that yes come to mamaobviously the longer you leave it on thetrain and horribleyeah but you’re pretty taste tested itwhy are you doing yeah of course allvocal babe hmmsuper super tasty so we’ll rewrite theinstructions down below the veganversion really easy swaps nothing fancyeverything you be able to find veryeasily especially Twitter’s and cars soI think this G’s actually been in foraround an hour and a half an hour sowe’re ready for Phase two over to youassembly I’ve got my vegetariandumplings ready to goI always just use a recipe that’s on theback of the book because it’s a littlebit of self-raising flour a little bitsalt cold water I think you just activevegetarians do it done they’re ready togo they go into the stew for 20 minutesand so I thought it might be a good ideanow to use the waitress and partnersvegan marinated no beef chunks so I’mgonna cook them as per the instructionson the back which is 8 minutesshallow frying in there it says to use 1TSP of oil and I’ve got two packs soI’ve put in 2 teaspoons of oil so I’mjust gonna heat those through now andthen I’m gonna add them to the zoo withthe dumplings give them 20 minutes tokind of get all nice and juicy in withyou and then those are good to go andthen I’m just boiling my potatoes at theback for my mashed potato I would saythey’ve got nicely browned they’re likehow do they do it kind of smells likebeef so look for white star this wouldbe incredible stuff because it’smarinated doesn’t need to be seasoned oranything like that so very easy veryconvenient very quick so I’m just gonnaadd that to the shoe now put these ontop and then put the shoe back in theoven for about 20 minutes lasteverything like cooks together finishedoff my mash and we’re good to gohearty winter goodness right there soinstead of a cheesy batch I thought Iwould go down like the garlicky creamykind of mushroom and I just mash up mypotatoes and then I’m gonna add somegarlic granules my favorite hugginggranules love those too salt pepper andthen I’ve got some dairy-free cremefraiche I’m gonna put in so let’s likemix that all together and hopefullytaste goodoh well good thing we like garlic springMinnie Carla bringing us potato tastetest so garlicky mmm the faux cremefraiche like is a bit of timeit’s like garlicky salty not to love Ilove a dumpling dumpling queen is backfor almost like you are the egg king anddope linking but do it come on do I gettop marks that they look very very goodyet I’m realizing now that some kind ofgreenery with this broccolioh please we haven’t even seen thatwould be a really nice touch right nowoh that’s pretty good it’s really goodreally nice thick and out really nicelysweet delicious there you go that is theend result so it’s hearty not beef abeetroot stew with vegetarian dumplingsand then this like creamy garlic mash itsmells delicious you ready for this onewe go and then do your thing I likethose
