Smokey peanut butter cookies
Ingredients
200g (1 cup) smooth peanut butter
120g (1/2 cup) vegan spread
15ml toasted sesame oil
300g (1 & ½ cup) sugar
1 tsp vanilla extract
1 medium egg
130g (1 cup) plain/all-purpose flour
1 tsp bicarbonate of soda
100g (1 cup) oats
100g (3/4 cup) roasted peanuts (roughly chopped)
Sesame seeds (approx. ½ cup)
Method
Preheat oven to 390F/200C (fan assisted).
Beat the peanut butter, butter, sesame oil, sugar, vanilla extract, and egg until smooth.
Beat in the flour, bicarb, oats and peanuts until mixed and then transfer to the fridge for 20mins.
Take a 30g spoonful of the mix and roll into a ball. Spread the sesame seeds on a plate and roll the ball in them until coated. Then place on a lined baking tray. Continue with the rest of the mix and leave at least an inch apart. Chill in the fridge for 15mins.
Bake for 20mins.
Leave to cool for a few mins before transferring to a wire rack to cool completely.
