Salted Caramel Cookies Part 1



SALTED CARAMEL COOKIES
1 1/2 sticks of butter-soften at room temp
1 cup light brown sugar, packed
2 3/4 cups all purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 large eggs
1 tablespoon vanilla extract
TOPPINGS ON COOKIES:

A jar of homemade caramel sauce(or you can use store bought)(look down below for my homemade caramel sauce recipe)!
In a bowl cream brown sugar, salt, and soften butter till combined. Then add your eggs, vanilla and mix again. Then add in flour, baking soda, baking powder on medium-low just until fully incorporated.
Then left cookie dough chill in fridge for 45 minutes, make sure to cover bowl with some plastic wrap.
Line your cookies sheets with with parchment paper or use a silicone silpat baking liner.
After dough has chilled roll into 1 inch balls, and place dough balls on lined baking sheet 2 inches apart.
Then make a thumb print indention into each cookie, then fill that indention with 1 tablespoon of caramel sauce.
Bake about 12 to 18 minutes (do not overbake; cookies will be very soft upon removal, but will set as they cool.) Just bake till lightly golden brown!
Immediately upon removing warm cookies from oven, press a caramel Hershey kiss into the center of each.
Let cool then serve, they will keep in a air tight container for a couple weeks.

Homemade Caramel Sauce:
1 cup packed brown sugar
1/2 cup half-and-half
4 tablespoons butter
Pinch of kosher salt

Cook the sugar, half-and-half, butter, and salt in a small saucepan over medium-low for 5 to 10 minutes, whisking slowly, until thickened. Remove from the heat, and let cool slightly before serving.
Keep refrigerated up to two weeks after you make it. Just be sure to warm it up before serving.
