Low Carb Keto No Bake Cookies | Sugar Free + Gluten Free

It is hot outside and that means we do not want to turn on the oven! BUT, we still want cookies! That is where no bake cookies come in! These paleo cookies are SO easy to make and don’t require you to turn on the oven. They taste like cookie dough and are so addicting!

To keep them low carb and keto friendly we are using monkfruit and sugar free chocolate chips! You can use whatever sugar sub you want and you could use any chocolate chips as well.

INGREDIENTS:
6 tablespoons Almond Butter, (the no-stir kind)
2 tablespoons Unsalted Butter, (or dairy-free butter)
2 1/2 tablespoons Monkfruit Sweetener
1 1/4 cups Almond Flour, (125g)
1/2 cup Unsweetened Coconut Flakes
pinch of Salt
2 tablespoons Sugar Free Chocolate Chips, (or dairy free)

DIRECTIONS:
In a large, microwave-safe bowl, melt the almond butter and butter until smooth and creamy, about 1 minute
Whisk in the monkfruit until dissolved. Then, stir in the almond flour, coconut flakes and salt.
Place the bowl in the refrigerator for 15 minutes to chill.
Once chilled, stir in the chocolate chips.
Roll into 1 1/2 Tbsp balls (I used a heaping cookie scoop) and place onto a parchment paper lined cookie sheet. Press out slightly, to about 1/2 inch thick.
Cover and refrigerate for at least an hour.
DEVOUR!

– Hey guys and welcome
back to the FFF HQ where I
have a low-carb summer desert for you.
We’re gonna make some
Keto no bake cookies.
Make sure you hit that

Now, let’s dive right in.
Step one, is we’re gonna
make the base of our cookies
which is gonna be melted
almond butter and butter.
Like I said, the base is
six tablespoons of creamy
and natural almond butter.
You wanna use the no stir kind that
doesn’t separate or else it kind of makes
the texture of these
cookies a little bit funky.
I’m gonna put it into a
large, microwave-safe bowl.
And then, two tablespoons
of unsalted butter.
And we’re gonna bring it back
to the microwave and heat it up.
So I’m just gonna put
it into the microwave
until it’s smooth and melted,
which is about a minute or so.
(microwave beeping)

After a minute, you can see
it’s nice and smooth and creamy
and we’re ready to go finish it off.
We just wanna whisk it all
together until it’s all combined.
(gentle music)
And then we’re gonna add
in some of that monk fruit
which is that natural
sweetener that we used
in the lemon bars which is linked above.
(gentle music)
And then once that’s stirred
in and the monk fruit
has dissolved, we’re gonna
stir in one and 1/4 cups
of almond flour, so 125 grams,
and 1/2 cup of unsweetened coconut flakes.
And stir it until well mixed.
(gentle music)
Once that’s all mixed up, you
wanna go put your cookie dough
in the fridge for about
15 minutes just to cool it
before we mix in the chocolate chips.
(gentle music)
Here, we have two tablespoons
of Stevia sweetened
or sugar-free chocolate chips.
You can also use normal
chocolate chips if you
don’t care about it being
sugar free and low carb.
You just wanna stir it in.
This is why we chill the dough so
the chocolate chips don’t melt.
(gentle music)
And by the magic of
television, you guessed it,
we have a parchment
paper lined baking sheet.
So if you wanna take a cookie scoop,
and this dough is a little
bit crumbly so you kind
of just wanna pack it in there.
And then put it onto that
parchment paper lined pan.
And once they’re nice and rolled,
you just wanna press ’em
out about a 1/2 an inch.
Once they’re nice and pressed out,
we just wanna transfer
them into the refrigerator
for about an hour until
they’ve hardened a little bit
and they’re nice and chewy on the inside.

Easy, peasy and no bake low-carb
and naturally sugar free
cookies with a little bit
of almond butter and chocolate
