2 cups of flour Plus extra for rolling out the dough
2 egg yolks
1cup of farmers cheese
1 teaspoon of vanilla
2 tablespoons chilled water
1cup of sugar

Bake at 375
For 20-24 minutes

[Music]hi guys welcome back and today I want toshare with you my recipe for geese feetit’s cookies or in Russian it’s calledlucy lock-it they’re very delicious verysimple to make and since it’s that timeof the year where we bake a lot you canchange out this recipe and add a lot offlavor to it or you can stay a basic andso to have a really tasty cookie so theylook like this they have sugar on top asyou can see the kids love them they’revery simple like I said and so I willshare my recipe with you guys alright sofor this recipe you’re going to needchilled butter this is two sticks ofbutter mine’s all just like broken upbut that’s just two regular sticks ofbutter you will need two cups of flouryou can I’m going to use vanilla extractonly I’m going to use half a teaspoonyou’re gonna need two egg yolksagain everything very chilled and thenplus-or-minus I’m gonna use 1/3 cup ofsugar maybe a little bit more justregular sugar I just have the organicorganic sugar and then you’re going toneed one or two tablespoons of chilledwater because um why I’m saying 1 or 2depends on how humid your houses anddepends on how warm your butter is likeI said everything should be chilled andthen the main ingredient is farmer’scheese or you guys can usecottage cheese or ricotta which ispretty close to this cheese this is justso you can but you can find this cheeselike farmers markets most of the timenot all stores carry it but like I saidthis tastes similar to ricotta cheese ifyou don’t have this cheese that’s fineother cheeses will work and then andthis is just an extra half a cup offlour that’s just for flowering theboard and when I’m rolling out the doughand then you will need a three inchdiameter cookie cutter or whatever youguys have to cut or you can use just aregular clean glass whatever you have tocut out the circles and then of courseyou’ll need a rolling pin so let’s getstarted alright so the first thing I didwas I grind my butter with my flour soas you can tell it’s all like grind withflour that way it mixes in and it’sreally fine little pieces and basicallyyou’re making a very flaky dough that’swhat the whole point of grinding it thenI’m going to add my cheese my farmer’scheese there we go because you see howit is you guys I don’t know if it’s andso I’m just going to mix it in with mybutter and flourit’s just I’m just basically breaking itapart making it little pieces it’s veryeasy to break apart so basically justmixing it injust like that and this is where I’mtalking about the flavor why I said youcan add any flavor you want is you canadd like orange zest to it you can addcinnamon I would love to add cinnamonright now but my kids don’t eat cinnamonso I’m just gonna stick with vanilla butlike I said for like the holidays andstuff a lot of people like the cinnamonflavor and not meg and all that you canadd a teaspoon or how much how muchflavor you guys want that’s how much youguys wanna add to it so you see howflaky this always and then I’m going toadd my two egg yolks and I’m just likelike I said I’m just breaking this justlike pie dough just mixing it in and nowI’m gonna add my teaspoon of vanilladoesn’t want to focus sorry you guysbecause of whiteso just teaspoon of vanilla and I’m alsogoing to add my ice cold water atablespoon I’m gonna add one at a timeso that if I need more I can always addmore like I said it depends on how humidyour houses and how warm your butter isbecause you don’t want to add too muchliquid to itand now I dumped all my dough on a saranwrap and I’m gonna I pushed it togetherand I’m gonna surround wrap it andrefrigerate it for at least an hourand then we’re gonna start rolling itout and baking it[Music]and as you guys can tell I made it intoa round disk so it can refrigeratebetter instead of adjustable and it’sbeen a little over an hour that it’sbeen in my refrigeratorI already floured my rolling pin and myboard and I am ready to cut it up intofoursand making sure that it’s firmI’m going to cut it in fours and thenI’m gonna refrigerator the rest whileI’m rolling out one piece so justworking one at a time you can cut out asmany pieces as you want but I just foundit that it’s easier to work one is justlittle pieces and having the rest andthe refrigerator until I’m ready to useit[Music]so I take this 1/4 of that and I make itinto this like little ball and or alittle disc and then I’m just gonna rollit out that’s why I have the flour hereI’m gonna roll it out and then I willshow you guys later what I’m gonna bethis is how much I roll it out as youcan tell it’s pretty thin and then Itake my cut out I think this is about 3inch so I have the regular circle hereand then I have the this one I’m gonnause this side and then so I just makeyou know as many things as I can on thissheet and then I reuse the dough againonce I once I cut out and have theleftovers but I make sure to refrigeratethem in between so like I will do thisfirst and then the rest I will combo itback together and put it back in therefrigerator and I’ll take out the onethat’s cold and leave this one for alittle bit longer so it states you knowcold so I think it makes about 45cookies I would say but it just dependson how thin or thick you cut out yourcookies so these are the cutouts and Ialready have parchment paper already andmy baking sheet so what I’m gonna do isI’m going to take 1 circle see how thinit is thisthis isn’t flour this is like that’s thecheese that’s in it and then I justpress it and then C and then I fold itfold it in halfand then I press one more and then Ifold it again and then I did only oneside I even want more sugar I can addmore sugar by pressing on it and then Ilay it on my baking sheet it’s weirdbrown sugar okay and then so I continueon with all my cutouts[Music]and then what I do is I press one by onein the middle of each cookie to makesure that it kind of sticks together andthe it doesn’t open up when it’s bakingyou[Music]want to make sure that your oven ispreheated to 375 and now we are ready tobake the cookies[Music]you want to bake them for about 20 to 24minutes it depends on your oven and oncethey’re done baking don’t forget to letthem cool and
