hello and welcome back to sitters bakersI know I’ve been gone for quite a whilebut that’s because of Christmas bakingand moving into this new house as youcan see I got this nice small work areaand I can finally talk to you guysface to face today I’m going to beshowing you how to make your own recipesI’m going to use a very simple recipe ofpeanut butter cookies to give you thebasics that you can use this for anyrecipe the more ingredients in yourrecipe the harder it is to create yourown recipe because the more that you canchange the harder it is that’s why withthe peanut cookie which is just sugarpeanut butter vanilla and egg and alittle bit of salt it’s very easy tomake your own recipe because I can onlychange these amount of ingredients alsoI can change what type I get but we’llget into that later first when decidinghow you’re gonna do your recipe you needto have a strong base which means yougot to use someone else’s recipe unlessyou know every single basics this is theeasiest way to get your own recipes youcan get your recipes from books or fromonline it doesn’t really matter as longas you have a strong base that you canwalk through to find what you need tomake so when I make my recipes I prefereverything to be in weight if you preferto just have them in volume that’s finefor you but find whatever measurementyou feel comforted using and use thatso this recipes that I found is involume so I need to figure out what it’slike in grams so that next time I don’thave to use my volume scales I can justgo directly to the scale making things alot faster especially since this volumescale music right now I have to level itoutscrape it out and then like that’s extrastuff said you don’t really need to doso and the beauty about this is you canuse any measurement so for example thismeasurement I’m using is 1/2 a cup butthe recipe asks for a full cup well halfa cups125 grams so a full cup of peanut butteris 250 obviously make sure that yourhands are cleandon’t be working with dirty hands nowwhile I’m making it I’m thinking how canI change it and why I would change it soone quick thing I could change is usingchunky peanut butter why would I want todo that different texture differentflavors come out etc so as you’reworkingmake sure you figure out what you wantas a final product now we’re gonnacontinue with the sugar again I knowwhat a half a cup of sugar weighs butI’m going to show you so that it’seasier for you to understand that is nota full cup or sorry half cup you need tomake sure that it’s full to the brim andleveled offwhere you’re gonna get a uneven productokay if you spill a tiny bit like thatcuz that doesn’t weigh anything only aproblem if you’re putting in a lot niceleveled off half a cup sugar 120 yepjust like all my other recipes so 120times to 240 so when making your ownrecipe and dealing with sugar becausethat’s normally a big problem with a lotof people is you don’t want it to be toosweet and you want to be healthy and allthese other factors but you got toremember what sugar does and if youdon’t know what sugar does then youcan’t play with it now sugar likes tomake a chewier mixed it level likeflatten out more so depending on whatyou want for your cookie decide how muchyou need but always remember if the ifit’s in the recipe there’s a reason forit to be in the recipe make sure youclean as you goi spilt a little bit of sugar don’t letthat stay there the whole time you don’twant to make your kitchen dirty for noreasonokay thanks a leg look we need to firststart mixing it togethernow legs are a little bit different forweight as long as you know what eggsyou’re buying you should know the weightof each egg so if you’re buying largeeggs it should be anywhere between 50and 55 grams per egg so if your recipeasks for just an egg that’s fine but forexample I’m gonna change this recipe notonly as the amounts of ingredients butthe volume so I might change how muchpeanut butter used in the future orsugar in the future but for sure I’mgoing to scale up the recipe and yeahit’s still the exact same recipe is theone you found online or in your cookbookbut you’ve changed it to what you needfor your business or for your family ifyou’re baking at home if I’m baking athome and I only have one child or I’mjust by myself I don’t need to make 100cookies but if I am working in a bakeryor owning a bakery it’s a lot moreneeded to have that higher scale sobefore we put this egg in we’re gonnawhisk it up a bit I like to add my ownvanilla right around this time therecipe asks for a teaspoon I know how todo this by weight you do it by yourlittle teaspoon measuring cup I know howmuch it is until you know how to do thatyourself I recommend using the scale oryour TSP measurements Finch make sureyou get it all there we gonow normally what I would do is havethat egg just cracked into here but sothat you can see every step I added thatBowl you don’t have to put it in aseparate bowl but it’s alwaysrecommended because if the egg has gonebad you can you don’t have to make thewhole thing bad especially when you’remaking large batches if the first eleveneggs were good and the twelfth one isbad that whole batch is bad and that’sno good anyway a little bit of salt andthen we’re gonna mix again as I’m makingthis I’m thinking what pairs good withpeanut butter obvious one comes to mindis chocolate so maybe I add chocolatechips or maybe a truck which drizzleover top of it after it’s done bakingbut all things to consider while you’remaking your own recipe now alwaysremember to clean as you goif you’re in a home setting or have notthat much space like I have a tiny sinkif you keep letting things pile up it’sgonna get worse and worse and worseso always clean as you go now thispeanut cookies is obviously flourless bythe way this is a four cominius to makethe design on the end that’s the otherthing you can start to think about isyes I might not be able to changeanything in this recipe because it’s thebest peanut butter recipe you’ve evertasted or for whatever reason let’s sayyou don’t know how to change it oranything like that you can at leastchange how you present it always bethinking what you can change to makethis yours now because this isand flour in here like I was about tosay you can mix us as much as you wantjust keep going at her nothing’s gonnachange on this peanut butter cookie solike I can keep going for days on endnothing will change so keep that in mindwhen you’re working with gluten freeoptions is they don’t have the problemsof gluten which is over mixing stufflike that Oh make sure you geteverything the more waste the lastprofits the more waste in here thedirtier sink you don’t want your sink togo belly-up because you put too muchfood products in it now we’re gonna putthis in the fridge let it cool downbefore we roll it out into balls andthen put our design on okay perfect aswe wait for our cookies to cool we canstart preheating our oven I don’t liketo preheat my oven until just beforetime so I don’t waste any power okay nowthat it’s cooled down we can start makeit into balls I like to use any toolrather than rolling it out anything atall a spoon preferably something thatcan get the same shape every time so Iwill use my ice cream scoopthe reason why I like to do it this wayis you get the same product every timeyou can always again because there’s noflower inherent like I can pack it I cansqueeze it I can do whatever I want tothis and it will never change obviouslyif you do it for like days on end it’sgoing to go bad but that’s because ofthe days not because of how much youmixed it my murder is cement in here atthe very end to make sure you get thatso you don’t have any waste now I endedup with this much which isn’t a full onetwo three four five six seven eight solet me this recipe it’s gonna give menine I just slowly add a tiny bit eachone I get all of this out now I caneither roll it like a ball so I can getwhatever desired thickness I want or Ican just leave them as is and just dothis I’m gonna roll them all into ballsthough this way I can make them as thickor as thin as I want and I also can testthat as well while I do this becauseagain we’re making our own recipe I wantto make sure that I know what I want forthe future which means the big timemight be different for each one thatjust means we have to watch it as we gonow I have nine cookiesthese are very big obviously which isperfect for business maybe not so muchfor home baking but I’ve never met achild that doesn’t want or an adult forthat matter that does not want a lot ofcooks so you don’t have to worry toomuch about this size so we’ll do threethis thickness now what’s the fork makeit look nice you’re gonna have to makesure that these are in the previous holeso you’re not just flatten it intopurely flat and you can always fixanything after the factagain remember these don’t get any worsethe more you mix with them so if youreally are going for perfection becauseyou’re making it for a party orsomething if you mess up you can re-rollthem it’s not a big deal now let’s gowith the thinner onesee I messed up there we can redo it noproblem now just be careful this isslightly thinner than this one I don’tthink I’ll go much thinner than that[Music]just be careful when you’re doing thisas you can see these very delicate I canmess up now because every time I’mpressing with this fork you can see it’sit’s making longer one way and not theother way I’m gonna try doing the to getthis design and not to make it easierfor me for example look with all ofthese I have to form it back into a ballbut with this I think this looks nicerand I don’t have to do any extra stepsto make it work perfectly so we’re gonnatry this where I see if the thicker onesare better than the thinner ones andwe’ll see how the design worksnow this one’s thinner than the restbecause I want to see if this designchanges okaythen at the end we can decide how we’regonna change the recipe but first let’shave it go inso for normal cookies we’re probablygoing to put it in for 10 minutes or soand for the thicker ones baby 12 so Ijust took it a little check on them 10minutes later they look like that as youcan see they are a little bit the samesizethey’ll be due to the sugar so maybenext time I put less sugar in itwell let’s just check one more time yeahthey’re basically all the same size nowbut the other side over there those looka lot better than those ones so I’mprobably going to keep this design okayfive minutes later and this is how theyturned out as you can see just aroundthe edges they’re darker brown that’swhat you’re looking for so as we can seethey all flattened up to about the samesize obviously they touched each otherwhich can just be fixed by if I madethis a bit longer I can have this onebit more in the corner but probably onlycould you six on a tray realisticallymaybe eight if I did middle stuff thesethree look pretty good though now theonly thing left is either to write downthings you want to change like maybechocolate drizzle or chocolate chipsor you want them to be thicker etc theway I like to do it is I like to go intomy word documents write down the recipestart writing in the tips what I think Imight want now this doesn’t work becauseI need to change the sugar so I mightend up changing the sugar or just addingmore peanut butternot to mention this only made ninecookies so I’m probably gonna make thisrecipe into two dozen so I gotta changethis whole recipe to make 24 these arehow the cookies turned out they’re a bitharder than I like I like a chewy Rsofter peanut butter cookie so I’mdefinitely gonna change the recipe tohave more peanut butter more egg lesssugar I’m also gonna definitely keepthis design and I’ve also changed therecipe which is in the description belowto have two dozen volume four quantitysorry sadly I don’t know how to makemultiple pages of the previousrenditions of the recipe so the onlyrecipe you’ll find in the descriptionbelow will be the new and improved oneand it will be constantly changing as Ichange the recipe so next time I makethis the recipe will change and so
