HOW TO MAKE THE BEST WHIPPED SHORTBREAD COOKIES/SNOWBALL COOKIES AND GINGER MOLASSES COOKIES

The aroma of homemade Christmas cookies baking in the oven is intoxicating enough to make even the Grinch warm inside.

Shortbread is such a classic holiday recipe. Buttery, delicious, and not too sweet – it’s the kind of classic that reminds you of your grandmother. What I especially love about whipped shortbread cookies is that they’re extra soft and melt in your mouth.

Snowball Cookies – soft and tender, buttery nutty cookie rolled in a blizzard of perfectly white powdered sugar. A must try Christmas cookie!

So where did these cookies originally come from? They are so amazingly good I guess that several different countries want to label them as their own =). What do you call these cookies? Some of the common names for these delicious balls of pure bliss are, Russian Tea Cakes, Mexican Wedding Cookies, Italian Wedding Cookies, snowdrops, butter balls or more specifically pecan butter balls.

The name that I think is most fitting is for them is Snowball Cookies, simply put because they look like little snowballs of course. I can understand where the “wedding” and “tea” labels come from because these seem so dainty and fancy, and they’d pair nicely with a warm cup of tea.

These Best Ever Ginger Molasses Cookies are exactly what their name suggests: they’re crispy on the outside, oh so chewy on the inside and bursting with sweetness and a sharp ginger flavor.

These molasses cookies are an old-fashioned holiday favorite! Super soft and packed with the amazing, rich flavors of molasses, ginger, and cinnamon. Just like Grandma used to make!
