How To Make – Salty Buttons, Gluten Free Almond Cookies (Soot Sprites) – Day 18,516

I did a cookie trade with my sister and here is what I sent her!

Cookies – Salty Buttons (Soot Sprites) Almond Four Gluten Free

1/4 Cup / 60 Grams Brown Sugar
2 Tablespoons / 30 grams Unsalted Butter
1 Teaspoon / 5 Milliliters Whole Vanilla Bean Paste or Vanilla Extract
1/2 Teaspoon / 3 Grams Baking Soda
1 Large / 60 Grams Whole Egg
1/4 Teaspoon / 1.25 Grams Kosher Salt
2 Cups / 225 Grams Almond Flour
1/4 Cup / 45 Grams 60% Cocoa Chocolate Chips
2 Tablespoon / 12 Grams White Granulated Sugar
1/4 Teaspoon / 1.25 Grams Vanilla Fleur de Sal

Add brown sugar, butter, vanilla, baking soda, kosher salt and egg to a mixing bowl. Mix well until light and creamy. Add almond flour and stir just until combine. Scoop dough out in 12 equal 1-ounce portions and place on the cookie sheet. Sprinkle each cookie with just a bit of white sugar, then with the tips of your fingers flatten down into cookie shapes into a round cookie shape, about 1/4” (3mm) thick. Sprinkle each cookie with a pinch of the vanilla salt, and top with 2 chocolate chip chips so it resembles the holes in a button. Bake at 350˚F (180˚C) for 13 minutes or just slightly browned. Remove cookies and place on cooling rack until cooled. Serve right away, or pack in an air tight container and keep for up to a week. These cookies are soft and chewy and a nice treat. Makes 1 dozen cookies.
