Soft Oatmeal Cookie Recipe
Ingredients:

2 1/4 cup all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup old fashioned oats
1 cup dark brown sugar
1/2 cup granulated sugar
1 cup butter, softened
2 tablespoons honey
1 teaspoon vanilla
2 large eggs
optional:
1 1/2 cup raisins
1/2 cup walnuts, chopped

Directions:
Preheat oven to 350F. Line two baking sheets with parchment paper and set aside.
In a medium mixing bowl add flour, baking soda, salt, and oats. Stir to combine and set aside.
To the bowl of a stand mixer add sugars and butter. Mix on medium speed until well combined. Add honey, vanilla, and eggs. Mix on medium speed until well combined.
Add flour mixture and option raisins and walnuts. Mix on medium speed until well combined.
Using a large cookie scoop, scoop out about 3 tablespoons of batter onto the baking sheet being sure to allow at least 1 inch between cookies.
Place in oven and bake for 20-25 minutes or until golden brown.
Remove cookies from baking sheet and place on a wire rack to cool.
