How to Make Mickey Mouse Halloween Cookies

I’ll be sharing my Pumpkin Spice Sugar Cookie Recipe with you as well as showing you how fun and easy it is to decorate these adorable Disney-themed Halloween cookies!

Here is a list of ingredients to make the pumpkin cookies:
3/4 Cup of Softened butter
1 Cup of sugar
2 Large Eggs
1/2 Cup of Pumpkin Purée
1 of Teaspoon Vanilla Extract
1 of Teaspoon Pumpkin Spice
1 of Teaspoon Baking Powder
1/2 of Teaspoon Salt
3 Cups of All-Purpose Flour

1. Add the butter and sugar to the bowl of a stand mixer. Beat them together until they are light and fluffy.
2. Add in the eggs, pumpkin, and vanilla extract and mix together.
3. In a separate bowl, measure and add the flour, pumpkin spice, baking powder, and salt. Use a whisk to mix the dry ingredients together.
4. Combine the dry ingredients with the pumpkin mixture.
5. Refrigerate the dough for at least 2 hours!
6. Sprinkle Flour on your work surface and remove the dough from the refrigerator. Work with small sections of dough and keep the rest either in the refrigerator or even the freezer so it will stay cold.
7. Roll out the dough about quarter of an inch thick and use a Mickey Mouse cookie cutter or a round cookie cutter to cut out your shapes.
8. Transfer the unbaked cookies onto a baking sheet lined with parchment paper.
9. Bake them at 400° for 7-9 minutes. When done, let them rest on the baking sheet for 1-2 minutes then transfer to a cooling rack.

Decorating Icing
3 Cups of powdered sugar
2 – 4 Tablespoons of Milk
2 Tablespoons of Corn Syrup
1 Teaspoon of Vanilla Extract
Gel Food coloring in orange, yellow, green, and black

1. Place all ingredients in a bowl and whisk together until there are no lumps.
2. Outline icing should be the consistency of toothpaste. Fill icing should be the consistency of corn syrup.
3, Add food coloring when the icing is at the toothpaste stage, then thin out part of it with the remaining milk.

Mickey Pumpkin
1. Outline the Mickey-shaped cookie with the thicker orange icing.
2. Fill in the outline with the thinner, corn syrup-like orange icing.
3. Pipe on the eyes, the nose, and the mouth with yellow icing.
4. Pipe on the leaf with green icing and let the cookies dry.

Jack Skellington cookies
1. Outline the circle with white icing and fill it in with the thinner icing.
2. Pipe on the eyes, nose, and mouth with black icing. And allow it the cookies to dry.
