How to make lemon meringue cookies

In this video, I make Lemon Meringue Cookies from scratch. They are a great treat and not as sweet as they might seem!

Cookie
Butter: 250 g or 1 cup + 2tbsp
Granulated sugar:
2 egg yolks
Baking flour: 5 dl or 2 1/4 cup

Filling
Lemon curd: 4 or 5 tbsp
Pistachios (chopped): a fistful

Meringue
Granulated sugar: 1 ½ dl or ¾ cup
2 egg whites

hello and welcome to dabble in dishes my
name is Simeon sometimes I need to visit
the dentist and you probably will after
this episode as well today we’re making
lemon meringue cookies it sounds fancy
but it’s actually very simple and easy
to make at home for this recipe you will
need one cup and 2 tablespoons of butter
1/2 a cup of granulated sugar and an
additional 3/4 cups of granulated sugar
for the meringue 2 eggs 2 and 1/4 cup of
baking flour about 4 to 5 tablespoons of
lemon curd 1/3 of a cup of pistachio
nuts 1 lemon or some lemon juice and
about 1 teaspoon of vanilla extract set
the oven to 175 degrees Celsius that’s
350 degrees Fahrenheit separate the egg
yolk from the egg white you will need
the yolk for the cookie and the egg
white for the meringue my advice here is
to start with a meringue and that can
take some time to make using a stand
mixer or an electric mixer mix together
the egg whites together with one third
of the sugar you don’t want to add all
the sugar at once but instead feed the
batter as you go squeeze in a few drops
of lemon juice into the mix you don’t
have to do this but by doing so it will
increase the volume of the egg whites
and also makes the meringue keep its
shape during baking
once your batter turns wider in color
and starts to look and feel more solid
but still running you can add another
1/3 of the sugar repeat that step one
more time until all the sugar is mixed
in you know your meringue is done when
you can lift the whisk and the meringue
stands up on its own you can start the
dough while your meringue is mixing in
the background put all the cooking
ingredients in a bowl and mix either by
hand using a stand mixer or a food
processor you will get a lumpy and
somewhat sticky dough

as usual when you divide the dough into
four pieces and put them on an oven pan
on top of some parchment paper flatten
each piece while making it longer using
a spoon draw a small ditch running
lengthwise through the strips of dough
when you’re done set it aside and start
chopping up the guns only to realize
that it would be much faster to give
them a couple of bursts in your
girlfriend’s blender instead of standing
there chopping away like a caveman
notice that I saved some large chunks
and mixed it in with the powder also
when life gives you lemons you spread it
evenly on top of the cookie dough spread
the meringue on top of the lemon curd
using a spoon or preferably a spritzer
which would have made this process much
easier and less sticky before going in
the oven
spread some of the crushed up pistachios
on top of the meringue pistachios are a
great addition to even out the sweet
flavor from all the other elements in
this cookie put the cookies in the
bottom half of your oven and leave them
in there for about 20 minutes if your
oven sucks like mine do you can turn
them around after about half of the time
in order to ensure a more even baking
experience for each cookie after about
20 minutes take the cookies out of the
oven and while they’re still soft take a
kitchen knife and cut them into
bite-sized pieces then you let the
cookies rest there for about 30 minutes
to an hour if you do this they won’t
fall apart when you pick them up thank
