Cake Mix Cookie Recipe
About a month ago, we were visiting my 90+ year old Grandma and she handed us her recipe box. I love looking through recipes. And seeing a stack of recipe cards either typed out (with a typewriter!) or written in my Grandma’s handwriting makes them pretty special.
One of the first recipes I came across were a cookie called Lemon Whippersnappers. They used Cool Whip and a cake mix which caught eye. I’m not sure where this recipe originated, but I have my grandma’s copy and that is pretty special.

Do Cool Whip cookies have to be refrigerated?
We store our cookies at room temperature in an airtight container.

Can you freeze Cool Whip Cookies?
Yes! These cookies freeze well. If you are freezing them in layers, place parchment paper between the layers so the cookies don’t stick when you defrost them.
Allow the cookies to defrost completely before you unwrap them. This keeps the moisture in the cookies.

Ingredients
1 box lemon cake mix
2 cups frozen whipped topping(thawed)
1 large egg
To roll the cookies:
1/2 cup powdered sugar

Instructions
Preheat oven to 350 degrees.
In a medium bowl, combine the cake mix, Cool Whip and egg. Stir until well mixed.
Place the powdered sugar in a small bowl. Drop the cookie dough by teaspoons into the powdered sugar and roll the dough to coat.
Place the balls 1 1/2 inches apart on a baking sheet that has been covered with a non-stick baking mat or sprayed with cooking spray.
Bake the cookies for 8-10 minutes. Remove them from the oven when they are set, but before they get too brown.
Remove the cookies from the cookie sheet to a cooling rack and allow them to cool. Makes about 20 cookies (2 1/2″ in diameter)

cool hwhip cookies they sound really
strange but I’m gonna show you today
just how cool these cookies are you’ll
start with a box cake mix add in an egg
in some Cool Whip and you’ll end up with
the easiest cookies ever let’s get
started one of the fun things about this
recipe is that you can use pretty much
any flavor of cake mix you’d like today
I have lemon but you could use chocolate
you could use funfetti you could do red
velvet really your favorite flavor of
cake go ahead and try it in these
cookies then I’ll crack in 1 large egg
and then eight ounces of coulis
you want to make sure that the kula is
totally thawed so that you can easily
mix it in we’ve made this recipe with as
little as two cups of Cool Whip I had
some left over one time and just put in
the two cups and it works totally fine
so you can use a little bit less if you
happen to have less but go ahead and
just mix that together the batter is
going to seem really light and fluffy
from that whipped topping in there but
just keep mixing and mixing until all of
that cake mix is mixed in once you’re
sure that all of that cake mix is mixed
in it’s time to scoop the cookies you
can take a cookie scoop or you can just
take a spoon spoon a little bit of the
cookie dough out and then drop it in a
little bowl of powdered sugar you’ll
need about 1/2 of a cup to a cup of
powdered sugar and then just toss that
cookie dough in the powdered sugar it’s
a really sticky cookie dough and that’s
why you do this so you can handle it a
little bit better plus it gives just a
little extra sweetness and a crinkly top
and then take it out and put it right on
the cookie sheet and then just continue
to do that
after the cookies are all scooped you
can bake them preheat the oven to 350
degrees and the cookies will bake for
about eight to ten minutes when the
cookies are done they’re gonna be really
thick and poufy and then they’re gonna
flatten a little bit as they sit that’s
okay that’s what they’re supposed to do
that’s what makes them chewy after they
come out of the oven you will let them
sit on the pan
for five to ten minutes they’re gonna be
really soft so you don’t want to
transfer them to a wire rack too soon or
they will fall apart and fall through
the wire rack after the cookies have
cooled and are a little bit firmer you
can go ahead and transfer those to a
wire rack to cool completely
