Winters is the time for baking with your family. I always enjoyed baking with my mother and later with my son. Here’s a recipe that is not only super easy but a lot of fun to bake.

The end result is this super buttery and crumbly cookie that you cannot have enough of.

SHORTBREAD COOKIES ASSORTED Makes 24 to 30
Ingredients:
All purpose flour – 2 cups
Butter – 1 cup
Icing sugar – ½ cup
Vanilla essence (optional) – 1 tsp
Baking powder (optional) – 1/8 tsp
Salt (optional) – ½ tsp

Sprinkles (multi coloured) – 2 tblsp
Choco chips – 2 to 3 tblsp

the main ingredientsflour, butter and icing sugar2 cups of all-purpose flour1 cup of butterand 1/2 a cup of icing sugarI am using unsalted butterso 1/2 a teaspoon of salta large pinchor 1/8 teaspoon of baking powderjust give it a mixyou could use just a wooden spoon and a bowlto beat the butterbut I am using my stand mixer todayadd in the butteruse the paddle attachmentto beat the butterscrape the sidesand the paddleadd in the icing sugarbeat it on lowonce the sugar has mixed with the butterincrease the speedand beat till it’s light and fluffyscrape the sides from time to timeand the paddleadd in some vanilla essencethis is optionaland run it againthat looks well combinedturn it offgive it a scrapethat’s light and fluffytime to add in the flourjust add it all intime to mix iton low at firstthat’s doneso just run the machinetill the flour is just combinedand no morejust get everything offthe paddledon’t want to waste anythingget it out on your work surfaceget it all togetherI put my dough on a silicon matand I’ll divide itinto 1/2and1/4from one halfto 1/4 part of itI’ll add in some sprinklesfor funand mix it into the other fourthI’ll add in some choco chipsmix it inso we have the plainthe one with the sprinklesand the one with the choco chipsnow you could use cookie cuttersto cut out different shapesor you could just flatten it outinto a rectangle or a squaredust your rolling pin with a bit of flourand roll it outto a rectangular shapeso that’s how I’ll cut itpoke in a few holes with a wooden skewerlike soarrange them on the baking traythat has been linedwith a baking sheetsimilarlyjust make the rest of themonce they are donejust put them in the fridge for about 10-15 minutesto firm upand then bake them180 degrees C for about 15 minutesI’ll check at the 12-minute markso these took about 15 minutes to bakethey are still warmso I’ll just let them cool down completelybefore I remove themlet’s take a closer lookthis is how they look on the undersidenice and flakyserve the shortbread cookieswith hot milkor a hot cup of chocolateandenjoy!
