How to Bake Christmas Gingerbread Cookies | LOW SUGAR RECIPE



In this video, I will be showing you how to bake gingerbread cookies, just in time for Christmas. Come bake with me with my favourite recipe using low sugar recipe that I have tweaked which I very much prefer. Also, watch my sons decorate their very one cookies and having a good time.

My Favourite Gingerbread Recipe:

Ingredients:
1 cup light brown sugar
1 cup softened unsalted butter
1 cup Treacle
2 large eggs
5 cups sifted unbleached all purposed flour
1 tsp baking powder
1 tsp salt
2 tsp ginger
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp cloves
1/2 tsp nutmeg
Sparkling sugar

Method:
– Cream the butter and sugar on medium speed until light and fluffy
– Add the treacle and mix until combined
– Add the eggs, one at a time, scraping the bowl in between each egg
– Mix flour, salt and spices, add to butter mixture
– Mix on low speed until dough forms
– Split dough into two pieces, wrap in plastic and chill for 1 hour
– Roll dough, chill for 60 minutes in refrigerator or 30 minutes in freezer.
– Cut out shapes
– Freeze for 15 minutes
– Bake at 170°C (350F) for 15-20 minutes, rotate tray after 10 minutes if required
– Allow to cool completely before decorating

Royal Icing for decorating cookies
1 ½ cup Pure icing sure (sifted)
1 egg white
½ teaspoon Lemon juice *Optional

Method:
Lightly whisk egg white and lemon juice together in a bowl. Gradually add icing sugar, whisking until smooth and combined.
*Food colouring is optional, dilute with water for more runny consistency.
