Graduation Cookies – Personal Cook Lauralee

Hello everyone,
I hope everyone is staying safe. I wanted to share with you all my Graduation Cookies. I came up with this recipe since my kid graduated from elementary school this year. As many of you or your children, my kid did not get to participate with any of the end-of-the-year events at her school due to the virus. Since my child’s favorite cookie is chocolate chip, I figured I was going to make her a gigantic chocolate chip cookie she will never forget. Ever since I have made them for her, I have been making many batches. They are so delicious as they are chewy and gooey on the inside with slightly crispy edges on the outside. Trust me, you don’t want to miss out on eating these cookies. Baking my cookies will have your home smelling sweet and inviting. I hope you make these for anyone you know how has graduated in 2020. This year has been rough, so go bake my graduation cookies and put a smile on someone’s face!

Graduation Cookies 2020

Ingredients and instructions:
Step 1:
2 Eggs
1 Egg yolk
1 ½ Cup Brown Sugar
½ Cup of White Sugar
1 Tablespoon of Pure Vanilla Extract
½ Tablespoon of Sea Salt
10 Tablespoons of Soften Butter (or 1 Stick & 2 Tablespoons of Butter). Reserve another ¼ cup (or ½ stick) of melted butter.
Combine and mix for about 30 seconds, except the ¼ cup of melted butter. Melt the butter in microwave about 20 seconds and let the butter cool until step 3.
Step 2:
3 ¼ Cups of All-purpose Flour
1 Teaspoon of Baking Soda
½ Teaspoon of Baking Powder
Sift and mix well. Slowly add your dry ingredients into your wet ingredients. Mix about less than 2 minutes or until all the ingredients come together. Do not over mix. Your cookies will become tough in texture.
Step 3:
¼ Cup or ½ Stick of melted butter
½ Cup of milk
2 ¼ Cups of Chocolate Chips
Ensure all of the cookie dough is removed from the sides of your bowl/container. Add your melted butter and milk into the mixture until everything comes together. Then fold in your chocolate chips into your cookie dough.
Tips: Do not mix in chocolate chips with a mixer as it will break/melt chocolate chips, losing the texture.
Scoop with an ice cream scooper and add on to your baking sheet. Bakes at 300 for 15 mins. You can line your baking pan with parchment paper/aluminum foil. Additional butter will not be needed. If you have a smaller ice cream scooper or use your tablespoon, then your cookies should bake within 8 to 10 minutes depending on your oven.
The first time I made these cookies was on a very cool day and the dough was the perfect texture in my opinion. Therefore, I quickly drop the cookie dough into the pan and baked. However, when I filmed this video, it was a much hotter day. If you find your dough overly sticky, then stick the cookie dough in the refrigerator for about 20 to 30 mins to set up. Then scoop to the baking sheet and bake.

Make-ahead tips: Take out a sheet of parchment paper. Take your mixture and pre-cut dough into squares of your desired size, then put into a plastic bag and freeze. When you are ready to eat your cookies, remove from the freezer allow to thaw out for about 5 to 8 minutes. Break off a square and drop it into the baking pan. Depending on the size of the square the cookies will bake 8 minutes if smaller portion and 15 minutes if bigger squares.
