GF Soft and Chewy Cinnamon Pecan Cookies

GF Soft and Chewy Cinnamon Pecan Cookies (Whole Food Plant Based)

Ingredients
-1 cup oat flour (make sure it’s certified gf if strict)
-1/2 cup almond flour
-1/4 tsp baking soda &powder
-pinch of sea salt
-3/4 tsp cinnamon
-1/4 tsp allspice
-1 flax egg
-1/2 cup cashew butter
-2-3 tbsp plant milk (add as needed)
-1/4 cup maple syrup (+2 tbsp for sweeter)
-1 tsp vanilla extract
-1/4-1/2 Chopped pecans

Mix wet in a bowl and then the dry combine, add pecans until well incorporated. Take tablespoons of dough and form a ball place it on the baking sheet and then flat slightly with the bottom of a clean jar or a measuring cup, whatever you have.

Bake at 350F for 10-12 minutes on a parchment lined or greased baking sheet. After they cool I like to eat them warm with a cup of plant milk,to dunk in,score! Or store in an air tight container for a week,they retain their softness very well.

[Music]hello guys today we’re gonna makecinnamon pecan cookies I’m trying tofind different ways of cooking cookieswithout using chocolate chips andchocolate because right now I’m kind ofin a transition with chocolate chips andI’m trying to find a new kind that worksfor me so we’re gonna make some reallydelicious cookies these are warm thesehave a lot of warm spicy nice flavorsand let’s go ahead and get startedokay so let’s start out with the wetingredients okay so I’m gonna go aheadand throw in one flecks and acts groundflax and I had it out a minute ago I’musing golden flax but one flax egg inhere and let’s go ahead and throw insome nice creamy cashew butter or cashewbutter is going to really go with theyou know the pecan cinnamon flavor isjust really gonna bring it all togetherand give you that buttery flavor likepecan shortbread cookies my mom used tobuy those all the time and when I hearthat man those cookies or when I seethem just so much nostalgia comes up andmy childhood my mom used to love buyingthose cookies they’re just great so nowwe’re gonna add some maple syrup I’mgonna do a little bit of maple syrup inhere just did enough to sweeten thecookies all the measurements will bewritten out for you guys so well I’mjust mixing this together all the wetingredientsthe other year and make sure your cashewbutter is really creamy you couldprobably use tahini as well and then adda little bit and add a little bit ofallspice and of course I’m going to addsome cinnamon like I said I don’t reallymeasure spices I just kind of eyeball itokay so we’re getting a nice make surehere I’m gonna get some vanilla extracta little bit of vanilla extract in hereor a lot you can never put too muchvanilla extract that’s what I say it’s alittle bit almond vanilla milk theweather over here is acting a littleschizophrenic I’m hoping that it willmellow out and we’ll have a nice winterbecause I love with the winter is one ofmy favorite seasonsall right extend and milk let’s go aheadand add in the flour so I’ve got someoat flour and this is the way that Ilike to use but I don’t do it myselfit’s nice and smooth so I like to usethis kind but any kind you have willwork even if you grind it up your stylethank you fine and then I’m going tothrow in some almond flour and againthis the brand of almond flour that Iuse a lot of the time box bread mealsyou know put in 11 8 because I wastalking so much so you know guys youknow I like to kind of do 1/4 of eachbut if you just do 1/2 a teaspoon ofbaking soda and I’m just gonna mix thistogether to make it like a nice cookiedough andyeah it’s light thick I want to go aheadand add in the keikain so the dough isquite thick now but you’re gonna goahead and do not worry it has some milkon standby and you need a couple oftablespoons it’s more or less just untilyou get it though that you can work withand you’re comfortable with so I’ve gotsome chopped pecans I bought the wholepiece I’m just gonna throw some of thosein here I’m not really going to measureit just one and you can test the batterif you need you want to add morecinnamon or allspice feel free to dothat we’ll just think makes all thistogether here and we’re gonna go aheadand form our cookies my oven ispreheated to 350 mmm don’t wait to tryto look at it okay so now you an agreased baking sheet or a parchmentpaper I have ran out of[Music]ready you so gonna go in the oven about10 to 12 minutes and then we will trythem you could sprinkle some raw sugaron top if you want it to to go the extramile but let’s go ahead and throw thesein the oven so the cookies are donelet’s take them out of the ovenlet’s tastehmmI didn’t expect them to be so soft butthey’re like perfectly soft look at thatWow first make these cookiesthe nice warm sweet flavors of themeatball the pecans you love pecans lovemaple syrup cinnamon you gotta try theseout guysif you like to see more recipes go aheadand hit that subscribe button for moreand guys thank you so much for watchingthis video and for joining me in thekitchen one of my favorite places in thewhole entire house it’s my happy placeone of my happy places another happyplace of mine is a library I used tolove going in the library reading and sobut the kitchen is definitely one of myhappy places okay guys I will see youagain very soonand happy healthy eating okay I knewsome milk No[Music]you
