[Eng]퍼지 브라우니 쿠키 만들기(Fudgy chocolate cookies recipe)

초콜릿이 많이 들어가 찐하고 크랙이 예쁜 초콜릿 쿠키에요.

다크 커버쳐 초콜릿 200g|400g
무염버터 45g|90g
황설탕 90g|180g
소금 1g|2g
달걀 100g |200g
박력분 72g |144g
베이킹파우더 1g |2g

[준비하기]
1. 달걀은 약1시간 전에 냉장고에서 꺼내 실온에 두어요.
2. 박력분, 베이킹파우더는 함께 2~3회 체 쳐 두어요.

[만들기]
1. 넓은 냄비에 뜨거운 물(분량외) 적당량 넣어요.
2. 지름 30cm 볼에 잘게 다진 다크커버쳐 초콜릿과 버터를 넣고 중탕으로 녹여요. 버터와 다크 초콜릿이 다 녹으면 냄비를 치워주세요.
3. 중탕에서 볼을 내린 후 황설탕, 소금을 넣고 거품기로 섞어요.
(설탕양이 많은 반죽이라 다 녹지않고 서걱거리는 느낌이 들어요.)
4. 10분정도 식힙니다.
5. 달걀을 조금씩 넣어가며 거품기로 재빨리 섞어요.
6. 체 친 박력분, 베이킹파우더를 넣고 완전히 섞일때까지 거품기로 섞어요.
7. 초코칩을 넣고 주걱으로 가볍게 섞어요.
8. 반죽을 비닐봉지에 담고 냉장고에서 하룻밤정도 휴지시킨다음 반죽을 71g 씩 분할해요.
9. 종이호일을 깐 오븐팬에 반죽을 일정한 간격을 두고 올려요.
10. 미리 170~180℃로 예열한 오븐에서 약11~14분정도 구워요.
오래 구우면 수분이 많이 증발되어서 딱딱한 쿠키가 될수 있으니 너무 오랫동안 굽지마세요.

[Prepare for baking]
1. Measure and place cake flour and baking powder in a deep bowl.
2. Preheat the oven for 30 minutes to 200 degrees Celsius.

[How to make cookies]
1. Boil the water(except for the amount) in the big pot.
Put the dark chocolate in 30cm bowl, add the chopped butter on it and double boil it.
Melt it by mixing it with hand whisk.
If the butter and dark chocolate are melted, put the pot away.
2. Mix the brown sugar and salt with the whisk.
3. Add the eggs that we mixed earlier carefully in it and mix it with the hand whisk.
4. Cake flour and baking powder and mix them.
5. Add the chocolate chip and mix it with the spatula.
6. Put the dough in the disposable pastry bags and make it flat.
keeping it in the fridge for about 16 to 18 hours.
Divide it into 71g each using the scrapper.
7. Place them with some distance on the oven pan with the parchment paper.
8. Put the dough in the oven and bake it in around 170°c for 11~14 minutes.

Making Fudgy Chocolate CookiesPour enough amount of hot water(extra) into a wide pot .Put dark couverture chocolate and unsalted butter into a 30cm-diameter bowl and double boil it in warm water. (If the size of chocolate is big, then chop it into small pieces)And leave them for a while, and whip it with a hand whisk to melt butter & chocolate together.If the chocolate doesn’t melt easily, put the pot in low heat again.When the butter & chocolate melted away, take the pot away.Whip it after put brown sugar and salt with a whisk. (It’s a batter with much amount of sugar, so you can feel the texture of sugar)Cool down it for 10 minutes.Whisk the not cold egg you put it at room temperature for an hour. Measure and add it a little by little and mix it quickly with a whisk.Mix cake flour, baking powder and sieve the mixture for 2-3 times and mix them with a spatula.Add some chocolate chips and mix them with a spatula evenly.Whisk the wall of the bowl with a spatula and mix the batter evenly.Put the batter into a plastic bag, and ferment it in the refrigerator for one night.It’s quite watery, so ferment it in the fridge to be divided easily.[Next day]Divide the batter into the pieces of about 71g with a scraper. (If you would like smaller one, it’s okay to divide into 40 to 50g.)Make it round. (Do it as soon as possible before the batter melts by heat from your hands)Place them with proper distance on the oven pan with parchment paper.Preheat the oven at 200 °C for 30 minutes.Bake it in the oven for 12 to 14 minutes in approximately 170 to 180 celcius. If you bake it too long, the moisture has evaporated and it becomes hard cookies, so don’t bake it for long)I often bake chocolate cookies because I like it.This chocolate cookies are really thick since I put lots of chocolate in it.If you like thick chocolate cookie, try to bake it!
