Dorie’s Cookies: One Big Cookie

Ingredient List:
1 1/4 cups (170 grams) all-purpose flour
1/2 cup (68 grams) whole-wheat flour
1 1/2 teaspoons ground espresso (optional)
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1/4 teaspoon fine sea salt
1 stick plus 1 tablespoon (4 1/2 ounces or 128 grams) cold unsalted butter, cut into small pieces
1/2 cup (100 grams) packed brown sugar
1/4 cup (50 grams) granulated sugar
1 large egg
1 tablespoon honey
4 ounces (113 grams) finely chopped chocolate (a mix of dark, milk, and white)
2 ounces (56 grams) finely chopped nuts (optional)
Sanding sugar, for sprinkling (optional)

what’s so wonderful about baking andabout cookies is the sharing and Ithought wouldn’t it be fun to have areally big cookie that we sharednot because I’m offering it to you butbecause we all dig in and break offpieces and share that one particularcookie it has the holiday andcold-weather spices it’s a little chewyit’s crunchy around the edges one bigcookie I mean a big cookie maybe theyshould be called one big cookie to sharewith friends with family with I lovethis I love this cookie but I also lovethe idea of it so we start with flourall-purpose flour and whole wheat flourwhole wheat flour gives the cookie justa little bit of chew I’m adding espressopowder it’s optional but I think it’s sonice in this mix and a teaspoon ofground cardamomI was recently in Scandinavia wherecardamom is in everything and I justfell in love with the flavor and it’sperfect with cinnamon and with theespresso and a little bit of saltit’s pretty just like that just whiskthis together I’m starting with coldbutter because this cooking is it’s madethe way I would make a tart dough or apie dough so I like to start with coldbutter brown sugar and white sugar tooso you get the chewiness from the brownsugar and the crispness from thegranulated sugar so just until it comestogether like this it’s still Columbiaand not well blended and I’m liking thisI’m going to put the flour mixture thedry ingredients in oh and love the smellof the cardamomyou can see the way it’s changing theway it’s becoming and crumby going tograb an egg and I’m gonna stir atablespoon of honey and then with themixer on low[Music]so I’m using a mixture of choppedchocolate bittersweet milk and white andsome chopped walnutshe’s your optional but chocolate oh it’sso nice it’s a firm heavy dough that’sgoing to be deliciousas a cookie[Music]just gonna get it started with a few afew pads it gets rolled right from themixture while it still will do as youtell it to do between two sheets ofparchment this is one big cookie in anyshape it ends up being just pull it anywhich waydon’t worry about symmetry but do everyonce in a while well and flip it overand roll on both sides you’re aiming forabout an eighth of an inch which is keyfor a cookie that has so many chocolatesin itthe thing about baking is we all lovewhat we get from baking but those of uswho really love to be loved this part -there’s plenty of pleasure to be had androlling the dough out seeing it changesmelling it having it fit down this goeson to a baking sheet into therefrigerator or freezer want to get itchilled before it goes into the oven tobake[Music]just take the top sheet of parchment offthe cookie and bake I love cookiesbecause they’re one to a person but oneunderneath this cookie and surveythere’s something about it that justmakes me very happy[Music]it’s like putting people around thetable which is always such a nice thingto do it’s just putting people aroundthe cookies and that’s a really nicething to do[Music]
