Chocolate cookies: creamy and easy to make!

You won’t be able to stop at one! 
 
INGREDIENTS
Dough:
1 medium egg
70 g sugar
130 ml milk
60 g butter
180 g plain flour
1 tsp baking powder
Pinch of salt
1 tsp vanilla
 
Filling:
5 g gelatin + 30 ml water
110 g sugar + 30 ml water
2 tbsp lemon juice
 
Glaze:
100 ml heavy cream (above 30%)
100 g dark chocolate
 
METHOD

In a bowl combine egg, sugar, salt and vanilla. Beat until fluffy, then add butter and milk and beat again. Then gradually mix in the flour and baking powder. Pour the mixture into a piping bag. Create circles on a baking sheet and bake for 12 minutes at 180ºC.
For the filling, mix gelatin with water and allow it to stiffen. Then mix sugar, water and lemon juice and heat until you have a syrup. Once the syrup is hot and ready, microwave the gelatin for 30 seconds until it is liquid again. Then beat the gelatin with an electric whisk while gradually adding the hot syrup. Beat for around 10 minutes until it is white and soft peaks form. Transfer to a piping bag. Once the biscuits are cool, dip them in milk then pipe some filling onto them.
For the glaze, heat up the heavy cream and add the dark chocolate to it. Mix until the chocolate has melted. Then dip the biscuit sandwiches in the glaze.
