By far the best tasting cookies in my book are Chocolate Chip and Butter Cookies!
If you love the “blue tin” Butter Cookies, THIS easy recipe is absolutely for YOU!
Just a few simple ingredients and you will be in Butter Cookie Heaven.
1 cup unsalted butter (room temperature)
2/3 cups of granulated sugar
A 1/4 teaspoon of salt
2 large egg yolks (room temperature)
1 and 1/2 teaspoons of vanilla
2 cups of all purpose flour
2-4 teaspoons of milk (for piping consistency) This dough can be rolled into a log and refrigerated for and hour and sliced to bake.
Heat oven to 350 degrees
In a bowl (stand mixer will be better), cream sugar, butter and salt.
Add the 2 egg yolks and vanilla
Add the flour and mix (it will be crumbly), then add 2 teaspoons of milk and if need 2more (adding more milk will make the dough more likely to spread when baking.)
Spoon the cookie dough into a large piping bag with a large open tip.
Pipe dough rounds onto a parchment paper lined cookie sheet and place in the fridge for about 30mins. (this dough should not spread but to be on the safe side..)
Bake at 350 degrees for about 12-16mins until golden brown on top. Allow to cool completely before dipping into your chocolate.
Optional – Sprinkle a little Sparkling Sugar just before baking
