My name is Nadia and welcome to my channel. I am a working mom of 3 kids that are the joy of my life and also love to cook and bake and sometimes be a little creative with it.

As a working mom I take some time from weekend to prep and reset everything, which includes cleaning, making some food for lunches and dinners, some laundry and just anything to help me get ready for the week. I have been doing weekend prep for over 20 years but just started recording it and hope you enjoy these videos.

Banana Walnut Bread Ingredients
Dry ingredients
2 cups flour
1/2 tsp baking soda
1/4 tsp salt or 1/2 tsp
Cinnamon

Wet ingredients
3/4 cups brown sugar or 1 cup
1 stick melted or soften butter
2 Eggs
Vanilla extract
3-4 ripe bananas – mash them separately and mix banana at the very end to wet
Walnuts

hi guys my name is Nadia and welcomeback to my channel today I have anotherweekly prep video for you as a workingmom of three wonderful kids I alwaystake out some time from the weekend orwhenever I can find time to prep for theweek aheadthis can include cooking cleaning bakinga couple of dinners and puttingcomponents together that can help memake dinners and lunches easily in theweekdays so if you have watched my lasttwo weekend rubs you know that ourwasher has been broken for about threeweeks now finally we were able to get awasher and dryer a thankful it wasdelivered yesterday and today I’ve beencatching up on laundry as well I alsopost weekly lunch videos and what’s fordinner videos so if you get a chance andplease do check this out alright withthat let’s go ahead and jump in andlet’s start cooking and I’ll take youstep-by-step and show you how I makeeverything and I’ll show you what I endup making all right so today I’m gonnashop my freezer to make the weekly mealplan alright I know I want to makesomething with the chicken the groundchicken that I made last weekend theweekend before so I’m gonna take thatout I have the frozen Joe the b-24 theroti with the fresh tortilla that youmake take that out okay I’m doing itone-handed but I’m gonna also check outthe marinated chicken I have on thebottom these are chicken legs so I’vebeen asked for chicken wings so I’mgonna take out a frozen pack of chickenwings they would probably not har todaybut they would be good for tomorrow andthe day after all right and then I havevegetables okra inside that I’m gonnamake okay I’ll take everything out andI’ll meet you inside all right here isthe menu today or the weekly plan that Ihave so farlet’s start here I took out this groundchicken from the freezer needs todefrost so I’m gonna be making potatoand I’m just going to be putting somepotatoes in there and some tomatoes andonionand make potato and ground chicken curryI took out one pack off the wheat doughfor the roti so we’ll eat it with thefresh roti this would be for tonightthen I have fresh okra or not the bestlooking there are only a few pieces badactually but these are really long Ihope they are well they’re nice andtender I mean they are tender but anywayI found I got it from Walmart and onlyknown by vegetables at Walmart I go toeither Krogeror any of the Pakistani or Indian storesfor fresh vegetables I went to Walmartthey had two big packs of Warcraft so Igot these and I’m gonna be making okracurry I’ll show you how to do that sothese two curries we’ll make today andthen I took out some chicken wingschicken wings are not defrostedobviously I’ll either marinate themtoday I’ll put them in cold water andmarinate them tonight so they will beready for tomorrow and then these are amarinated chicken quarter legs that Itook out from the freezer these will begood for us for one of the dinner nightsI’ll make it I’ll have it with rice orbaked potatoes and veggies that kind ofthing but marinating chicken and puttingit in the freezer helps me out a lotbecause all I have to do is defrost iton in the refrigerator or in roomtemperature and then I just make it inthe airfryer and to follow on how I makethe rest of the items like on today I’monly cooking these two queries and how Imake the rest of form I show everythingin what’s for dinner we make dinner onweeknights and sometimes I cook curriesjust enough for the day off and the nextday so that is easier for me and thenhere are tomatoes and onions for the twocurries and then I was also thinking tomake some blueberry muffins theseblueberries have been in the fridge fora week now I want to use these up soI’ll make some blueberry muffins andalso want to make banana nut bread Ihave some ripe bananas and I really wantto use those up all right let’s go aheadand get started so before I get in thekitchen I wanted to start a load oflaundry we obviously had a lot of loadsto go and I was kind of startingeverything kind of late in the day so Idecided to start laundry now and catchup on as much as I canafter cooking I wanted to make sure theLord is running as I’m working in thekitchen I have also been catching up onlaundry midweek like on a Wednesdaywhich is also easier so I don’t have toomuch to do on the weekendbut since the washer was just deliveredwe had a lot to catch up on on thisweekend so here’s a banana bread recipethat I follow I got it off of YouTubebut I have made a few changes I willwrite up everything and leave it in thedescription box for youbut this is the easiest recipe you’llever make a few ingredients and it turnsout perfect every timeso let’s go over the ingredients realquick no idea why everything is soyellow okay the first thing you’ll needis flour all-purpose flour brown sugarbaking soda I like to have walnuts inmine so banana nut bread I have two eggsI’ve sought unsalted butter one butter Ccinnamon and then you need need somekind of an elephant flavoring I like tohave cinnamon sugar on top just asprinkle and then salt that is all youneed and and you need a breath and youcan butter it to me you can butter itreally really well or you can also putparchment paper I think I’m gonna you doboth today all right let’s go ahead andoh and the most important ingredientsyou need three to four ripe bananas allright let’s go ahead and start makingthis easybanana bread the first things firstwe’re going to need three differentbowls this is for dry ingredients thisis for bed ingredient and then bananasare going to be mashed in here you wantto add bananas at the very end to makesure that your banana bread does not getspongy and stuffy and that’s the bestthat’s the best tip I can give you onbanana bread and banana muffins as wellmash the bananas separately and mix itat the very end so I need so to startoff I need some compression softenedbutterand I don’t use any mixture with for thespecial you no need for that like I saidit’s pretty simple recipe so I’m justgonna make this off real quick and thenstart mixing my ingredients okay I’mgonna start with the dry ingredients youcan grab sleeping clothes you have to goto bed now anyway you have sleepingclothes in your drawer right I’m gonnaput half a teaspoon baking soda that’sone of the changes that I have made fromthe original recipe that called for waytoo much baking soda and it was and thenit just didn’t taste rightthis is baking soda I just have it in ajar and a half teaspoon measurementcinnamon as much as you desire I like alot of cinnamon so that’s not too muchfor two cups of flour they’re all thedry ingredients and I’m gonna set themasidewe will work with them wet ingredientsnow all rightthat’s butter going in the butter is nothot but it’s more like softened meltedbutter one cup of brown sugar I like youcan also have 3/4 cup of brown sugarokay one cup of tightly packed brownsugar then we have 2x vanilla extractso before you mix bananas in mixing thesugar the eggs and everything elsereally wellI’m actually gonna use four bananas andthat’s not threemuffin I add my walnuts to the wetingredients maybe half a cup of walnutsinside and then I’ll save some for thetop bananas are going in the wetingredients and I don’t like to mash ittoo much just enough where I can stillsee the lumps a little bit of bumps inthere I’m gonna mix this in and thenthis mixture just fall in the way and Iwas really gently and then this and thenthis mixture is gonna go in the flourand the dry ingredientsnow there’s no need to over mixed on Ido not use any kind of electric mixer tomix this in because there’s really noneed to blend it so much so we just foldit nicely you can still see some chunksof banana showing and that’s gonna makeit more moist and that’s gonna be ableto eat it’s gonna show really nicelywithin the bread as well so just mix ituntil you don’t see any flour on thebottom or on the side and now it’s readyto go in the banana bread tin wellbutter it real quick and then putparchment paperI don’t like spraying the spraysin my tin because eventually it goes badbecause of the spray it’s like usingbutter a lot you can put it in as is oryou can use parchment paper that way iseasier to pick up and it’s done becausethe butter the parchment paper issticking to the pan I’m gonna pour thisin and this is gonna be a thick batterokay now that it’s ready to go in theoven I’m gonna add some walnuts on topall right it’s nice and even I’m gonnaput some walnuts on topby some I mean a lot and I want a littlebit of sediment sugar on toptiny bit okay the oven has beenpreheating on 350 degrees this is gonnago in for 60 minutes but I will check in40 minutesokay well the banana bread is cookingI’m gonna start on the okra I havewashed the okra and then dried it reallywell as you know already has a slimytexture to it so I don’t want any extramoisture going in the curry this isgonna be a really dry curry I’ll showyou as I make it and then I will showyou the final product of course so I’mcutting okra into bite-sized piecesthat’s how that’s how I like it really Idon’t like it too big and I’m just gonnachop it up real quick and then choppingup my onion so the way I’m cutting theonion it’s not really gonna be choppedup but it’s gonna be longer layers onthe onion and I’ll show you in a littlebit how it looks like I’m cutting itwidth wise in other words and thenmaking it into like half rings half ofan onion ring so they’re gonna be niceand long within the within the curry andthey’re gonna be added at the very endI’m gonna chop up my tomatoes reallychunky as well and then we have cilantroand serrano pepper going in so I’m goingto start on both Curry’s at the sametime but I will show you steps on eachone in order that way it would makesense if you are following the recipeI’m gonna start with okra first I took areally small amount of oil for okra inthis pan and then started browning it upand I’m trying to show you how it lookslike this also helps get rid of theslimy texture of okra so we just sauteedin a little bit of oil for four to fiveminutes now I have added garlic and I’madding red chilli turmeric and thencumin seed in there and a little bit ofsalt so the amount of okra I have ismaybe two cups or a little bit less thanthat so I’m just adding spices accordingto that once I add all the spices thenI’m gonna stir that aroundand then later on just add a little bitof water because it has been cookingreally dry I added a little bit of waterand at the same time just started alittle bit and then add tomatoes at thesame time one-sided tomato and just giveit a quick stir and then I’m gonna coverit and let it simmer now okra does nottake long at all to be cooked I’m justgonna leave it there maybe for fiveminutes so after being covered and thenhaving it a little bit dry because thetomatoes they do release a lot of waterI uncovered it and made it dry a littlebit and then this is how it should looklike so tomatoes are still chunkyand as you saw I added a lot of tomatoescompared to the okra that that’s what’sgonna give it more salary and moretomato curry type here I’m adding theseblack seeds this is called Kalonjiin order to I’ll I look up the I dunnoEnglish guys but I’ll have to look upwhat is called in English and then I’lladd it to the screen but but this caseis really nice more salary fragrance toit not not much of a flavor abouttreatments so at this point your okrashould be cooked almost all the way andthen tomatoes are already cooked anddried up and now I’m adding the onions Ijust like the way these longer onionslooked they’re no longer red onionsespecially look and taste in the okra ifyou like to chop it up in a smallerpieces of course you can and I’m justadding these to the almost at the end ofthis being cooked so that the onionswould still remain a little bit crunchyI’m gonna stir it a little bit I’m goingto add cumin seed powder and corianderpowder to it and then I’m gonna becovering that for less than five minutesso the onions have been covered and thatalso produce a little bit of water soI’m turning it up on high heat and justdrying it up a little bit I also tastedit and added a little bit more saltbecause I felt like I didn’t have enoughall right so here is the final productthis is how it looks likeas you can see the onions are notexactly crunchy but they are still notcooked all the way they’re moretranslucent now but I did not cook themall the way so that you can still feel alittle bit of crunch if you want to callit and then the okra curry itself ispretty dry I know that currytraditionally is anything with liquidbut in order this is called Fujiya and Idon’t know the exactly let’s justtranslation for that but I’m just gonnacall it okra curry this is really spicyand dry and as I said you can taste thetomato and onion and okra all togetherin a spicy mix and it’s really yummy andtasty with fresh roti your freshwhole-wheat tortilla all right this isthe okra curryalright let’s get back to the aloo ki maor the ground chicken and potato curryas I mentioned I was cooking both ofthem at the same time but I wanted toshow you the steps in order so here forthe chicken keema curry I am addingbrown onions to a little bit of oil andbrown it up really well and now I’mgonna be adding it in a blender whichalready has cut-up tomatoes in it tomake a paste out of that now I’m addingmy ground chicken that has already beencooked which I took out of the freezeras I mentioned I’m going to saute itjust a little bit I added a little bitof garlic in that and after blending thetomato and onions together I’m puttingit in there now if your ground chickenis not already cooked then you wouldBrown the onions and add the groundchicken and spices to it and then addthe tomatoes later but I skipped thatstep because it was already cooked nowthe tomato and onion paste was has beenright in the ground chicken I have addedpotatoes in there I’ve also addedserrano pepper and now I just added alittle bit of water and the powder thatyou saw was cumin and coriander seedpowder so I have added that I’m gonnastir it around taste it and it a littlebit more salt water it’s not supposed tobe watery curry it’s more of like aliquid I’m adding more serrano pepperand then I’m just gonna cover it addenough water so the potatoes can getsoft so I was also checking up on mybanana bread in the meantime I took itout of the oven after about 45 minutesthe sides were pretty done and it lookedpretty done from outside but when Ipoked in the middle you can see it wasstill a little bit wet so that had to goback in the in the oven back in the ovenfor about 10 to 15 more minutes therecipe calls for 60 to 65 minutes now Ihave taken it out after the additionaltime and this looks to be done so I’mgonna let it sit here and let it cooland that’s my okay sign I’m gonna let itcool here and then I’ll show you how itlooks from inside I’m gonna be cuttingit into this after dinner okay this iswhat I ended up making today as far ascooked food so we have what is it calledground chicken that I took off fromfreezer and then I added potatoes – it’sa ground chicken and potato Korea hassome cilantro on top we will have itwith fresh roti will be tortilla I tookthis out of the freezer as well this iswheat whole wheat dough and I will makeroti for tonight so we’re gonna add eatthis tonight and I’ll add a clip once Imake it and we’re eating the dinnerthis is okra curry this is okra curry soit is not really really good I like howdry and kind of blistered the okra isand then dried tomato so it doesn’t havea paste like I showed you how I made itbut it turned out really good so this isgonna be for us maybe for tomorrow todinner or day after whenever we need itand then this is how I’m gonna take itfor my sister-in-law’s mom I know shelikes it so I don’t know if I mentionedit already my brother and mysister-in-law had a baby you baby in thehouse very exciting I took some food theother day but I made banana bread andother stuff that all take me hopefullytomorrow the chicken wings I haveseasoned them with black pepper a littlebit of garlic pastelemon pepper and some red chili that’sall I have in here we will make them mytomorrow tomorrow or day after wheneversabe demands the chicken wings will makethem before dinner and then this isboneless I think it’s gonna yeah let’sturn out to be born luck we’re gonna seehere boneless chicken time that wasmarinated in the freezer I’ve taken thisout and then I’ll make some rice orbaked potato or veggies with it soplease follow the what’s for dinnervideo I posted weekly and I show you howI make dinner every night or what I whatwe end up eating every night and here isthe banana bread I have not cut into ityet I’ll have to make roti first andgive kids dinner and then after thatI’ll cut and cut into this and show youhow it looks like and if I end up makingblueberry muffinsblueberries are still sitting here if Iend up making blueberry muffins I’llshow you that as well and then I knowthis is only like four items I’ll end upmaking pasta or rice or something elsewithin the weekI know I have stuff in the freezer thatI can whip up anytime also I did notmake any special lunch meals for myselfthis time I have enough in the freezerI’m sure you saw it when we took out theitems from the freezer so we have enoughbrown rice and veggies and meal prep inthe freezer so that would help me aswell alright that’s what the meal planlooks like this week and just for therecord this is how much longer we had todo all this laundry is dried and readyto be picked up so I’m working on thatas well kids will pick up their ownlaundryHalina can hang her shirt and her schooloutfit but yeah that’s what’s going onand here’s how the kitchen is lookingI don’t know if I’ll be able to makeblueberry muffins today if not todayI’ll make it tomorrow morning but we’llfigure it out I’m gonna start cleaningthe dishes now[Music][Music]we all wanted pieceswould be taken for my brother mysister-in-lawand Auntie and young some of them for meall right I’m almost done with laundry Ihave been running it behind the scenesbut this is my last load and I’m sohappy all right time to fold the laundrynobody likes you know it but somebody’sgotta do it and that lucky one is me soI’m just putting some empty baskets infront of me so I can separate each oneas I goaleena in Hunza have already picked upthe clothes that need to go in thehangers for them and these are just theones that need to be folded and in thedrawers so they do fold they do helpfold their laundry sometimes where theyafter folding they definitely pick it upon their own I’m not responsible forthat anymore I don’t like to watchsomething so I don’t feel like I’m beingtortured too much well I’m doing wellI’m folding the laundry this particularday I was watching 30 day fiancé let meknow in the comments below if you guyshave seen it and how crazy do you thinkthat concept is and the show is I wasmaking some loud comments as I waswatching it but I didn’t include it inthe video so I ended up making muffins Imade blueberry muffins and alsochocolate chip muffins the next day Ihave this recording and also some othermuffin recipes that would be coming upsoon I’m sorry I know I’ve beenpromising that but I just need to editit and post it I should be able to do itin a few days so I baked a few goodslike I said chocolate muffins andblueberry muffins and then I took someto my brothers homes along with a brandof banana bread so these three platesare going to three different
