Vonnie’s Cracklin’ Skillet Bread in Cast Iron Pan

I hope you enjoy my new category: Vonnie’s cookbook collection. I will pick out recipes from cookbooks I especially like. Some are very old, some not so much. Being a cookbook addict, I’ve had plenty!
This particular cookbook comes from Kentucky during the ’60’s or ’70’s. The cover and some pages are missing. But the obvious use it has received caused me to be interested. By the way, no offense to anyone named Verna, it’s just a name not common for quite a while!
Enjoy this old time recipe from a lady named Ethel.

Heat oven 375 degrees
1/2 pound bacon
2 cups corn meal
3 teaspoons baking powder
3 tablespoons sugar
1 teaspoon baking soda
1 1/2 teaspoons salt
2 eggs (beat)
1 cup buttermilk
1/4 cup bacon drippings
Brown bacon in cast iron skillet. Crumble. (I diced mine first). Don’t wash skillet.
Set aside bacon drippings to use later
Combine dry ingredients.
Beat eggs and stir into 1 cup buttermilk. Add bacon drippings. If you don’t have 1/4 cup, add enough additional buttermilk to make 1/4 cup. I didn’t and it was a little dry
Combine liquid and dry ingredients and crumbled bacon..
Bake 20-25 minutes until golden brown.
You can also use two well greased layer cake pan.
