The Essential kit you NEED to make your first loaf of Bread – Bread Tip 129 – BAke with Jack

Making your own bread really doesn’t mean you have to buy loads of kit. There are a few things that are really helpful but to get going you don’t need much at all. Here are my essentials, and a couple of extras you might like before next week’s simple loaf tutorial 🙂

keen home bakersit’s time to crack it well and truly andmake bread your new hobby of the newyear we’ve spoken about why it’s a greattime to start making your own breadwe’ve spoken about my top tips forbeginners and before we hit next week’svideo the starts are finished simpleloaf of bread tutorial this week we’regoing to go through the essential piecesof kit that you need in your kitchen tomake up let’s talk aboutessentials the things that you need thethings that I wouldn’t be without andit’s not a lot of stuff but everythinghere is important and everything herehas its place the dough scraper here wehave the rubber lovely bag we checked noscraper that loads of you have got inyour home’s already’s got two straightedges for cutting and cleaning one curveX edge sorry for mixing scooping out thebowl and as nice as it looks this logoisn’t here just for fun you know it’sraised up that gives you grip so itdoesn’t slip around your fingers youdon’t have to squeeze it so much and youwon’t get that sort of thumb fatiguething going on I use these a lotliterally for everything you may haveseen in videos before and you’llcertainly see in next week’s logotutorial video if I’m ever without one Ifind it a little bit difficult tofunction I’ll use a credit card orsomething I need something for scrapingand lifting it’s quite nice to have twobecause when you’re doing messy thingslights your batters and brioche laterdown the line you can use one to scrapeoff your scraper and keep it nice andclean dough scrapers what you need largemixing bowls I use these bowls for a fewreasons they are cheap they arelightweight and they’re really thinmeaning they stack nicely and thecupboard then take up too much space Ikeep them all the same sizeotherwise it stresses me out there’snone of this what size bowl do I needstress or trying to slide a big one outfrom underneath the pile of a smallerone seriously I can’t cope with thatsort of thing in a kitchen let’s keep iteasy also as I mentioned in a videoabout cleaning up the mess they’rereally easy to clean because they’replasticjust let the dough dry out bend the bowlscrape it with your scraper and all themess will just fall out nice and easilylarge mixing bowls proving cloths we’vespoken about these before you’re goingto need something to cover your doughwith and I use these rather splendidbake with Jack proving cloths they’rejust simple and natural cotton clothsare they like to keep separate fromalmighty tails free from fragrancedetergent they don’t smell soapybecause the smell will get into yourbread dough and when it does it’s notvery nice also I like to use these as aKoosh by pleating them up for my guestsbut we’re getting ahead of ourselvesclean that fragrance free cloths arewhat you need a water jug a jugall water that’s it really don’t stressout about measurements up this side youdon’t need them and the reason is thatyou’ll see in next week is that wemeasure our water in grams anyway whichis why we need a nice set of scales notcups get some scales are measuring gramselectric ones like this are far moreaccurate than old-school ones the oneson a balance with the weights or theones with a dial with a spring insideyes you need to replace the batteriesevery once in a while but if you’remaking fresh bread once a week usingyour scales around 5 minutes exercisewhen you make sure you turn it off afteryou use it every time by my calculationsit will last for approximately ages forthe simplest of recipes you can measureeverything straight into your bowl ontop of your scales like this which islovely but get scales before you startif you’re if you used two cups don’tjust go ahead with Karp’s thinking I’lljust google the conversion rate becauseit doesn’t work like that you can’t juststraight-up swap white measurements intovolume it doesn’t make sense stuff getslost in translation get electric scalesand measure bring your stuff in weightin grams a nice baking tray like thisone for a loaf tin like this youprobably already have a trade in thekitchen which is fine for freestandingbloomers but on this occasion forbeginners I’d always recommend makingyour first loaf and it’s him because youcan get away with more error that waywhen you’re shaping and still make anepic loaf on a trade you need to Libyalittle precise when shaping so thatholds up under its own weightas it stands alone while it puffs upright before all over the 10 that hassupport either side and they’ll onlyever rise up regardless of any shapingmishaps if you are using a tray you’regonna need a roll of parchmentpapernext up you need that you might haveguessed already and often here’s my ovenhere do you like thata paper one you need an oven to bakeyour bread inside – electric fan butI’ve been hosted in bread making coursesin other people’s homes forsix-and-a-half yearsand just as we have done in the pastthat you can make great bread in alltypes of upins you might need to adjustthe baking temperature all the timesometimes you need to flip a loaf upsidedown for a bit to finish off but it canbe done and if you like I can do anothervideo about oven types how to use themto your full potential for bread let meknow in the comments if you like thatvideolastly a bread knife is super importantonce your triumphant loaf has emergedfrom the oven and you’ve patientlyallowed it to cool downdon’t chunk it up into door wedges orsquash it flat with a rubbish knife getyourself a long serrated knifepreferably curved like this one andyou’re going to need obviously achopping board to go with this so lastlyyou need a nice bread knife choppingboard wooden if you can you still needsome practice with a knife like this toget your slices bang on but you’ll be ina much better position to get those it’dbe such a shame to go for all this makeyour last and make a nice loaf of breadand then ruin it right the end with adodgy knife if you have these eightpieces of kit in your kitchen at homethen you’re all set to make amazingbread however there are a few thingsthat you might find handy now I don’twant anything to put you off embarkingon your first loaf a journey so if youstart watching this next part and startthinking to yourself hey maybe I won’teven bother in the first place then skipthis bit to the end of the video herehunt down those eight bits and bobswe’ve already spoken about and sit tightwaiting for next week’s tutorial videoa deep tray and a kettle bread bakersmake a lot of noise about baking breadwith steam and they’re quite right to doso because it’s a total game changer butif it seems a little bit overwhelming atthis stage don’t worry about it it’spossible to make bread without it youmight want to use it later on when youstart getting ugly fingers you mightwant to introduce a bit of a steam laterdate but if you do want to introducesteaming so you’re having at home you’llneed a deep roasting tray use anotherone because it’s probably going to getruined and an embarrassing leash oddlylooking diabolical excuse for a kettlelike mine I’m sorryapologies that’s awful there’s nothinglike posting a video of your kettle outto the world to bring your attention tothe fact there’s probably time for anupgrade I’m not gonna leave it there I’membarrassed myself an apron it mightsound silly and a nice excuse to talkabout the rather lovely baked wheat Jackapron available to purchase in thebakery Jack shop but there’s somethingnice about getting dressed for the jobat hand and to be quite honest with youI wear this old one from my oldrestaurant days with holes in it becauseI love it but obviously we need toprotect our clothes from dough becauseonce that gluten takes hold on yourjumper it’s gonna be hard to get offeven in the washing machine thereprobably it probably won’t come off butthere’s something almost ceremonious Ifeel about putting on your apron tyingup getting ready getting grounded youknow ready to embark on your breadmaking journey it’s a nice feeling apreparation before you begin that fieldgoes unnoticed you know I like it apencil and a piece of paper or a notepadlike this one this is what I use if youtruly want to learn you’ll need a way totrack your progress an array to recordyour results that’s why it’s handy towrite down your recipe write down thetemperature of the day write yourtimings down like we mentioned last weekand most important of all make down anote of what the bread was like at theend is so often forgotten but make anote of what it was like whether youliked it or not and then you’ve gotsomething to go by next time if thereare any failures and I think you want totweak and adjust you can make thatprogress next time if you made a recordof the last one pencil and paperhugely underrated thermometers are niceI use thermometers literally all thetime one foot of room and whyfor the water and it’s probably more outof habit because it’s quite crucial whenI’m hosting a course I need to know thetemperature so I know what to expectfrom the DOE on the day I need to knowhow quickly stuff’s going to rise I needto exist and I need to know what toexpect to basically and I’ve begun toinclude the in temperature of my kitchenand all the recipes on my blog it’squite handy to know because you’ll knowwhy things might be puffing up a littlebit slower or faster than mine you’llstart to recognize the speed of thepuffs and learn to instinctively atthat’s what you’re doing to thetemperature of your room on a day thisone’s getting a little bit old as youcan see it’s always 20 degrees in myhouse thick thermometers can be usefulif you want to know your temperatures anice cooling rack I was in two mindsabout what category to put this inbecause it is essential to call yourlife but you can get away without usinga rack if you don’t have one you canlean your loaf up against something oryou can loot use like an oven shelf outof the oven that you’re not using orsomething like that it’s nice to havethe right tool for the job if you don’thave one and you don’t want to get oneyou can get away without one a coolingrack and there it is on my mission myconstant mission to remove
