Simple sourdough bread

½ c. Sourdough starter

1-1/2c. Warm water

1-1/2t. Salt

4+ c. Flour

•In a large bowl stir together starter, water, and salt. Stir in flour one cup at a time until dough doesn’t stick to the sides of bowl yet still moist and a bit sticky to touch. Cover with damp towel, let rest 30 minutes.

•Turn dough out onto a floured surface and form gently into a ball by pulling edges into the center while rotating dough in a circular motion. Place back into bowl, cover with a damp towel, and let rise 8 hours (or overnight).

•Turn dough out onto a floured surface and gently tuck edges under while rotating in a circular motion; place in the bowl and cover with a damp towel for 30min.

•preheat oven to 450°F. 

•place dough on parchment paper, tucking edges under one last time, cut 1/2in. deep lines in the top to make a pattern, lift dough into a dutch oven on the parchment paper. Cover and bake for 20min. Uncover and bake for 30min. Lastly bake bread directly on the rack for 10min.
