Shaping and Cooking Real Sourdough Pita Bread at Home

In this short video you will see my personal technique for shaping sourdough pita bread and how to cook the pitas on a baking stone in your home oven.

hi there welcome to my demo on shapingand cooking sourdough pita bread thefirst thing we’re going to do is takeour dough and divide it in half this isgoing to start the shaping process wewant 16 equal portions they should bearound 65 grams each here I’m cutting itin half again and then each quarter willbe cut into quarters now I’m going tospeed up a little bit and show you therest of the shaping processokay so on the next one I’m gonna slowit down I’m going to show you exactlyhow I do it plenty of flour on the boardand start by pulling the top toward thecenter rotate and pull the top towardthe center again do this all the wayaround until you have a nice tightlittle ball of doughyouokay at this point you’re going to flipit over and use the outside of yourhands to create tension across the topof the dough ball you’re bringing themdown and in at an angle toward the worksurface rotating the ball as you go thisis going to create the tension acrossthe top and make a nice tight littleseam on the bottom and now you have anice little ball of dough that’sperfectly round and perfectly tightokay have your oven preheated to 550degrees and have a baking stone in therethe next part of the process is actuallyrolling the dough use plenty of flour onyour work surface so that the doughdoesn’t stick and roll it into a niceround pancake about 1/8 of an inch thickhere I’m going to speed up a little bitand get to the final productand here it is completely rolled outinto a nice thin pita you can see howeasy it is to handle it’s still verystrong okay now you’re gonna stick thatpita right onto the hot baking stone andthe process of cooking takes about twominutes at five hundred and fiftydegrees and you can see it’s gonna startto bubble up and as it’s cooking it’sgoing to fill with hot steam creating alittle balloonand there it goes it’s completely provedand at this point you’re going to wantto flip it around a little bit just soit cooks evenlyokay Here I am cutting one of the cooledpitas to show you how to open it with avery nice little pocket you can use thesmall piece as a brace on the bottom ifyou’re going to be making a pitasandwich of some sort that adds a littleextra layer and fill it with whateveryour favorite toppings are if youenjoyed this video please make sure tocheck out my others and subscribe thanks
