One Banana Toaster Oven Bread



Ever had one banana that you forgot about and don’t know what to do with it? Here’s a recipe for a one banana-banana nut bread baked int he toaster oven.
Here’s the recipe:
EASY TOASTER OVEN BANANA BREAD
Ingredients
1 small or medium very ripe banana, mashed, (at least 1/4 cup mashed)
1 large egg
1 tablespoon plain Greek yogurt*
1 tablespoon canola oil, veggie oil or soft butter
1/4 teaspoon pure vanilla extract (I used imitation)
1/2 cup white whole wheat flour or all purpose flour (I used bread flour)
1/4 cup granulated white sugar
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/8 teaspoon fine sea salt (I used just plain ol’ Morton’s table salt)
Instructions
Adjust your toaster oven’s cooking rack to the lowest placement and preheat to 350F on the “Bake” setting.
Grease only the bottom of a 3 x 5.75 x 2.5-in mini loaf pan.
In a medium bowl stir together the mashed banana, egg, yogurt, oil, and vanilla. Add the flour, sugar, baking soda, cinnamon, and salt. Stir until just combined and small lumps remain.
Pour batter into your prepared pan. You can put nuts on top and lightly press in the batter or leave the nuts out. Bake until a toothpick inserted in the center is free of crumbs, about 24 to 28 minutes.
Allow bread to cool for at least 10 minutes before removing from pan to cool completely on a baking rack.
Notes
*Use any yogurt you have on hand, plain or vanilla Greek yogurt or regular yogurt work great, so does sour cream.

hi folks Mike here from random acts ofcooking and I’m gonna make some easytoaster oven banana bread using a 1banana banana I know what I’m doingbecause that’s what it says right herealright let me show you alright this isgoing to be a to bowl method we’re gonnahave 1 bowl of wet one bowl of dry startoff with we have 1 almost overripebanana gotta switch that up 1 large eggshells optional 1 tablespoon of plainGreek yogurt 1 tablespoon of oil Isuppose you could use melted better ifyou want quarter teaspoon vanilla andwe’ll get all of this stuff mixed up nowfor the dry ingredients 1/2 cup flour[Music]white sugarpull the teaspoon of baking soda quarterteaspoon ground cinnamon about 1/8teaspoon of salt I’m just gonna mixaround these dry ingredients and we’llpour em in the wet ingredientsoh and mix this up now this is a smallbatch 1/2 Nana batch so I’ve just got acouple of these manywhatever you call these kind of panswith a buckle on it I’ve got um nonstickpans with some butter in them thatsounds a little redundant but what theheck yeah we’re gonna fill these I thinkmaybe about a half Wowwe use all of that over half way fullwhatever it ends up okay these ended upabout maybe a third of the way up anywaybanana nut bread so my nets are somechopped up walnuts walnuts are good soI’m gonnabut enough of them in there to make itgood and I’m gonna push him down just alittle bit some of those are gonna endup sinking to the bottom I think I don’tknow I haven’t made this beforeall right there my one banana banana nutmuffins bread whatever you wanna callthese all rightlet’s go to the toaster oven all right Ihope my toaster oven preheated to 350the timer set for 20 minutes and getthis out and I’m using this little panon the bottom just so there’s not quiteso much teeth down there and we’ll putour little loaf pans in there check itin 20 minutes so see a little bit okayit’s been about 25 minutes total I checkthese just about five minutes ago withthe toothpick they weren’t quite readyyet I’d say they look good and theysmelled red toothpick comes out cleanall right these are done let’s get theselet’s get these on a wire rack let themcool okay these have been resting foralmost ten minutes they’re still alittle warm now hop up yeah see how toget this all right there’s that one popthis one outand let’s look at the Bob Oh beautifulbeautiful beautiful all right don’t letthem cool off just a couple more messwithout the the pans around them andthen we’ll cut into these and give it ataste I can’t hardly waitthey look really good and they smellawesome what it’s been another fewminutes let’s get into the middle ofthis I’m curious to see if very many ofthese walnuts actually sucked down intoityes oh there’s a few of them in thereyeah I can see him I probably could havepushed him down a little bit more insideof that but I wasn’t sure the othersthey got down there with that anywayright now for the ultimate test thetaste test okay here it is taste test ofmy one banana banana nut bread smellsreally goodyou know I’ve never made these before Imade them a long time but I’ve nevermade it with yogurt so I know we’ll seewhat happens it really tastes it I don’tI can’t taste the yogurt obviously cuz Idon’t it’s just plain old yogurt thatmaybe that will make it a little bitmoist longer maybe it helps with thewriting with the baking soda I don’tknow either way just turned out reallydead nice little breakfast alrightthanks folks see you next time
