[Keto] Low Carb Bread

This is definitely the best keto/low carb bread! No egginess here!

Ingredients:
* 1 cup Vital Wheat Gluten
* 1/2 cup Oat Fiber
* 2/3 cup Flaxseed Meal or Psyllium Husk Powder
* 1/2 tsp. Xanthan Gum
* 1 tsp. Salt
* 1 tbsp. Erythritol or favorite sweetener (optional)
* 1/2 cup Warm Water
* 1/2 cup Heavy Cream
* 1 tsp. Honey
* 1 tbsp. Instant Yeast
 
Instructions:
1. Add ingredients to the bread machine following your machine’s instructions and baking procedure.

Notes:
*For my machine, I use the multi-grain option, along with the 2 lb. (or 1000g) option and set it to medium.
*If you wish to use the oven, after kneading the dough for 5 minutes in a stand mixer with a dough hook and then allowing the bread to proof in a warm place for 2 hours, bake at 350º F for 1 hour.

thisvideo ok so let’s get right into ittoday’s bread recipe is going to sort ofbe a mash-up between the hundreds ofdifferent keto bread recipes that I haveseen online over the years and I’ve sortof taken inspiration from many differentones and kind of made my own changesuntil I have finally found the what Ithink is the perfect keto bread recipebecause it tastes exactly like regularbread and I have made this both in theoven and in the bread machine todaywe’re going to be using the breadmachine and some of the ingredients aregoing to be sort of unconventionalingredients but they are easy to getonline and I will have all of that belowfor you so let’s go ahead and getstarted we’re starting off with 1 cup ofvital wheat gluten and that we’re goingto add a half a cup of oat fiber and bythe way I am using a bread machine andyour bread maker will most likely tellyou that you can just add all of theingredients in a certain order rightinto the bread pan and you can totallydo that but I don’t know I get some sortof satisfaction of mixing it alltogether in the bowl I just think itworks better for me but again you don’thave to necessarily do that so nextwe’re going to be adding 2/3 of a cup ofground flaxseed meal if you can’t getyour hands on this you can also usepsyllium husk it works just the samehere we have a teaspoon of salt half ateaspoonxanthan gum and 1 tablespoon oferythritol now remember this is notsugar this is erythritol it’s a sugaralcohol so many bread makers will tellyou not to add your sugars directly toyour dry ingredients we don’t have toworry about that here with theerythritol and if you don’t even wantthe erythritol in there at all if youdon’t want that extra sweetness you donot have to add it in and also it doesnot have to be powdered erythritol youcan just use the granulated because itdoesn’t give that sort of cooling effectin this recipe and we’re only adding atablespoon okay so the dry ingredientsare all well combined so we are all setto start adding things to the bread panso we are going to start by adding theliquid in first per the instructions ofmy specific bread machine so here I have1/2 of a cup of heavy cream along with1/2 of a cup of water now I like tostart it off with a warm liquid to helpget the yeast going you don’tnecessarily have to if you’re using abread maker because it does have afunction where it will proof the breadfor you and have a nice warmth in therein order for the bread to do its thingwith the yeast however I kind of like togive it a head start so what I do is Iuse the half a cup of the heavy creamstraight from the fridge so that wascold and then what I did was I had somewater in my electric tea kettle and Iput it on the lowest setting that thisone can go which is 175 degreesFahrenheit and then I added that half ofa cup of warm water into this cup andthen that made it just a nice lukewarmtemperature next we’re going to beadding in two eggs directly into ourbread pan and I just realized that Iforgot to beat the eggs so you want tohave two beaten eggs that you’re addinginto the mixture so I’m just taking careof that really quickly right nowI’m sure the bread machine can handle iton its own but I’m just gonna go aheadand follow the instructions for addingeggs to this specific machine and now weare ready to gently add in all of ourdry ingredients right on top of theliquid next what I’ve done here is I’vejust made a little bit of a well so thatwe can add our yeast you just want tomake sure that you don’t go down intothe liquid you just want to have a nicelittle spot for your yeast to sit andnow following the instructions for mybread maker you are supposed to add yoursugars around the edge of the bread panso today we are going to be using oneteaspoon of honey which I am just goingto drizzle around the edges here andthis is just to feed the yeast so I’mnot using any magical special honey oranything like that because that’s goingto be consumed by the yeast so it reallydoesn’t matter anyway and lastly we aregoing to be adding in our yeast this isthe one that I am using it is a breadmachine instant yeast but I also usethis as well when I make this recipe inthe oven it doesn’t necessarily have tobe the one for a bread machine so what Ido with this is I also store this in thefridge to keep it nice and active for usso what I’m going to do is just add onetablespoon of our yeast right into thedesignated well that we’ve set up for itand that is it we are good to add thisinto our bread machine so let me goahead and bring that over to you and wewill be back okay so I have my breadmachine here so we are all ready tostart making the bread so I’m just goingto add very carefully the bread pan inand the way mine works is you lock it bygiving a little twist clockwise and thatis locked in and we’re just going toclose the lid and set it up to startbaking so what I’m going to be doing formy machine is the first thing we do hereis we select which type of bread we aremaking my bread machine does have asugar free option I have not tried ityet but I find that the multigrainoption is what works best for me one dayI will try the sugar free but I don’twant to risk making any changes rightnow so we’re going to be choosing numbereight for my machine and this specificbread is going to be a two-pound loaf sofor me I will be choosing the 1,000 gramoption and last but not least we’regoing to be selecting our color and I doapologize if you can’t see the screenbut it’s basically everything that I’mtelling you that I’m pressing here solast but not least we have the option oflight medium and dark I like to work onmedium so that is where I’m going toleave it so at this point we are all setto bake so according to my bread machineI will have fresh bread in three hoursand 14 minutes so let’s go ahead andgive it a go I’m sure that inquiringminds want to know what it looks like inhere so here we can see that right nowit is starting the mixing process andthen it is going to need for a while andlet it sit and proof and start making itso I will see you when we have freshbread we are now back and now we have aloaf of bread now I know that this onelooks a little funky on the top butthat’s just the way that it happened tobake up but I have made plenty loavesand they do come out nice and pretty Iam going to go ahead and make anotherloaf using the same recipe right afterthis one and then hopefully that onewill come outlooking a little prettier and then Iwill show you pictures of that one aswellbut in any event this does make a niceand tall loaf as you can see so it’sperfect for sandwich bread so let’s goahead and see what we have now rememberthe dough hook is still in the bread sotypically what we have to do is justkind of turn it over and give the bottoma little wiggle to release it and thereit isit just released and there we have avery tall and nice loaf and don’t forgetto remove the dough hook from the bottombecause it may still be in there um thistime around it’s not in there I thinkit’s still oh it actually stuck in herethis is the first time that the doughhook stayed in but typically the doughhook does end up still in the bread andyou need to fish it out so just keepthat in mind I just remembered I do havea little bit of a left over loaf that Imade previously just so that I can showyou here this is what was left over butas you can see it did make a nice andprettier loaf here on top so results mayvary it’s just the way that it bakes butit all tastes the same and it’s allgreat and here you can look at thetexture of the bread it’s just like aregular sandwich bread that you couldbuy and also of course that’s notlow-carb but this is absolutely amazingit’s not eggy I can’t stand an eggy ketorecipe most of the breads and lots ofother recipes use a lot of eggs in orderto get that lifting power but you end upwith a very eggy product and that’s notfor me this bread is not that sodefinitely give this a shot because Ipromise you you will absolutely lovethis bread I love having sandwiches withthis and I don’t even realize it whileI’m eating it I forget that it’sactually a keto bread and also it doestoast up a really well I amgoing to do a video in the future oftoasting this up so definitely staytuned for that I’ve just given this aslice so that you can see what the breadlooks like it’s the same thing as theother loaf that I just showed you but Iwanted to slice this one just so you cansee that it is indeed identical nicesandwich bread nice and stretchy givesyou that same dough like feel as if youwere not using low carb products and yousee I’m really tugging at this and it isnot breaking too easily it’s nice andsturdy so you can put all of yourcondiments you can do everything thatyou would do with a regular bread I’mgonna go ahead and give it a little riphere so you can see how it breaks thatis just like any other bread definitelygive
